Hi Nairalanders!
Egusi soup is arguably the most popular soup in Nigeria and I have made it using 2 distinct methods : the tomatoes frying method and the soaking method. Please see below for details of how I prepared each type and let me know which method that you prefer

Method 1 : Tomatoes frying Method

INGREDIENTS
Egusi 3 cups (grinded to powder)
Beef
Stockfish
Smoked fish
Crayfish
Kpomo (cow skin)
blended Fresh tomatoes and pepper
Vegetable (ugu leaves)
Red oil
Seasoning cubes and salt
Water

Method 2 : Soaking Method

INGREDIENTS
Egusi 3 cups (grinded to powder)
Goat meat
Stockfish
Dried fish
Crayfish
Kpomo (cow skin)
Uziza leaves
Vegetable (ugu leaves)
Red oil
Seasoning Cubes and salt
Water

Yummy!!!.
Once did the tomato frying method back then in uni and my guys were laughing me for cooking egusi soup with tomato, sounded funny at the time though. lol.
Wish this post had come earlier on then would have been nice.
Anyway lovely meal to behold.

Indeed the taste matters the most but some persons may prefer one soup over the other due to it's appearance or texture.

I used to prefer the frying method but not with tomatoes and neglect the soaking method until I tasted it and found that it's same thing so far as the taste is nice..

But I like frying mine when cooking egusi soup

The stewed egusi for me. I love it that way..

I like that you use vegetable Ugu.. I think it's the best combination though okazi is nice sha

Yes, Ugu is very nice especially when combined with uziza leaves. I also use ukazi and bitter leaf sometimes

Only if I could have a taste!!
