You do not build an entire fintech with a single programming language. It is a huge collection of different aspects working in unison

Java, kotlin, swift for mobileapp
Mysql and mongoDB for database

Not necessarily though, using modern languages and frameworks makes for an attractive UI and a general faster service which might contribute to it's success

Facebook and X is built with native on Kotlin and swiftUI. It might be faster but Cross- platform and native has pros and cons. Some special features is harder to implement in Cross-platform because it is limited.

But cross platform language actually are very advantageous to new systems

Flutter gives an option to choose kotlin or java, same as swift for ios
