Na how great grannies, grannies dey cook am be this , them go wash the fish , remove all the dirts in it , rinse it very well and pour it inside soup and nothing do them or we since then to this moment.. even if you eat at any canteen/cafeteria till now or tomorrow or next 10years , that's how it is and it can never change . There is a say , na fish 🐟 soup , no go stir am ( obe eja ni ,malo ro ) . Them go put am inside soup ,leave am make e cook Wella for like 15-20minutes unstirred , them go just carry the pot shake am , return am back .. Make we no dey complicate things .. If you like to perboil it , go on and nobody go hold you . But 90-95% of people do not perboil it , na straight inside soup after proper rinse .. |

U leave it in to get property cooked only this time with the soup/ sauce which will even be more tasty. It's inside heat and will get done fish is not cow tail that U need to boil for long. Na wah oo abi na 1 hour U take dey cook Ur own fish? It's fish already too soft to be cooked for long. Wash properly and cook it 15-20 minutes and ur good to go |

essenjack:you are 100% correct. let me take soup for example, every consciously cooked soup most have reasonable amount of vegetable, vegetable contains vitamins and minerals( no be coke and Fanta oo) that are heat sensitive. ie they are destroyed by long cooking. so the best way is to precooked your fish then transfer it to the soup, add vegetable, turn it, count one to ten with your finger and bring the soup down. your balance diet is ready. putting raw fish will extend the cooking time and the following will happen; 1. Nutrients will be lost because of long cooking. 2. the taste and fresh aroma of the food will be lost. 3. appetizing appearance of the food will be lost. 4. the food will be harder to digest and metabolize. 5. increase possibility of charred and burnt foods which contain carcinogenic substances. |

englishmart:Yes you are correct. You can wash, season and marinate fish before adding it straight into the pot. You can as well scald it with boiling water to remove the odour and toughen up the skin. It is nonsensical to pre-cook fish, prawns and other seafoods before cooking again as they are already very soft to begin with. You will simply end up with rubbery, overcooked fish that’ will be like chewing stick. Or scattered, over-soft fragments of flesh. People from south south riverine areas understand this better. Their seafood soups always taste good because they still have some nature flavour and texture without overcooking them to death. |
