Its a different type of rice, the type used for making masa. You can't prepare white rice or jollof rice. So it isn't a 'waste'.
It is glutinous rice or broken jasmine rice. It can gum like any swallow.

The rice we eat is usually boiled with the husk, dried and dehusked. They dehusk this directly after harvest
It's not made with regular rice. In the north, they have this very small grains that look like broken rice. That is the original rice used for this.


.it's now I know it's called glutinous rice. The fragrance is so good. It can be broken jasmine rice as that one is sticky too.

Long grain, short grain will not make good and sticky tuwo.

Tuwo shinkafa is not a swallow because you will still used your teeth to decompose it,before swallowing it.And it doesn't have the same smoothness like semovita.

The one I know very well here is maize popularly eaten by Cotonou people. But because it scatters anyhow unless you make it extra soft and eat as fast as possible with your spoon, we device a mean of making it last by adding casava flakes (lafu).

Rice and casava flakes is what we call poundo yam.
It's the same with tuwo. It scatters unless eaten hot

It Goes very much well ogbono and okoro soup.

Tuwon Shinkafa (Rice swallow) is made from 100% Rice. It is a major swallow in Northern Nigeria. So many eat this as their major swallow at home, on a daily basis. It is also served in special occasions like weddings, naming Ceremony, Birthday parties, special occasions etc.

Tuwo Shinkafa go well with either Egusi soup, bitter leaf, Groundnut Soup, vegetables etc. It doesn't go well with draw Soup (my opinion).

You have typed a very MISLEADING information on "Amala" which is made from 3 different kinds of Elubo (yam flour, unripe plantain flour, and lafun OR fermented cassava flour) here. It's WRONG and highly disrespectful of YOU to come on an online discussion forum to post demeaning comments about other people's ethnic cuisines that have been eaten for centuries. I've eaten Tuwon Shinkafa, Tuwon Masara, Tsire (the standard Hausa word for grilled steak meat and chicken), Asun, Boli and grilled fish combo, and a wide range of properly made Nigerian street foods and foods served in standard restaurants and hotels over my decades of travels and they are largely good. The ONLY foods I won't ever eat are sushi (Japanese uncooked fish dish) and monkey meat including grilled OR pepper soups made from crocodile, snake and dog meat, which is personal to me because I dislike eating meat from carnivorous animals.

Just so you know, the term Amala is a Yoruba word which refers to the final swallow that is made from boiled water mixed with the 3 different types of Elubo [Elubo is the Yoruba word for powdered yam flour, powdered unripe plantain flour, and powdered fermented cassava (lafun) flour].

Elubo is made from 3 sources of either sun-dried OR better yet industrial oven-dried peeled yams, peeled unripe plantains, and fermented cassava (lafun) which are then milled and turned into packaged FLOUR brands of yam flour, unripe plantain flour, and lafun (cassava flour) which you can find in top department stores and food shops worldwide.

Elubo Isu (Yam flour)
Elubo Ogede (Unripe plantain flour)
Elubo Lafun (Fermented cassava flour).

It's these 3 different types of Elubos (yam flour, unripe plantain flour, and lafun (fermented cassava flour) that the Yoruba folks use to make "Amala" which is the final swallow.

1] Amala made from oven-dried and milled "yam flour" is colored light to dark brown.

2] Amala made from oven-dried and milled unripe plantain flour is colored light brown.

3] Amala made from lafun (fermented cassava flour) is colored white and this is why it is called WHITE Amala.

It depends on individual. Some don't chew Pounded yam, Eba, Akpu etc. While some chew anything that enter their mouth. Including Eba,Akpu, Pounded Yam, Rice swallow. As for me I don't chew any swallow including Rice swallow

@ topuc, preparing it is similar to preparing or turning Semovita or Amala while on a low heat, you keep on turning it and it will continue to blend untill it becomes like Semovita or any kind of swallow although you might see few pieces of rice inside but it really makes no difference because it has become Tuwo Shinkafa

I can eat it with any kind of Nigerian soups, l often buy it from Hausa women when l was still in the North, because they are good at preparing it, chai,l miss Northern Nigeria oo before it became infested with terrorists sad

The Golden Penny Semolina flavor feels, smells and tastes much softer and different from the regular Hausa Tuwon Masara which didn't go too well with my taste buds maybe because of the harder and brittle consistency. I like Tuwon Shinkafa (made from a different specie of small whitish rice) the best and it goes well with any major Nigerian regional soup.
