@ Topic,
To make Semovita, l take some Small quantity, put it inside a small bowl 🥣 of cold water, and l will stir it and keep it aside.

Meanwhile, my Water is boiling on my Gas cooker in a bowl 🥣.

I will now transfer the cold Semovita into the boiling water and began to stir it gently, while stirring it, l will be adding the powdered Semo gradually until it gets to the Kind of thickness that I want.

I can also add a little water, while I have turned it to some level of thickness, cover it on a low heat.

And that is it , you have a well prepared Semovita that goes with ogbono , egusi bitter leaf soup or nsala soup or ofe Owerri or Afang soup loaded with chicken Turkey, kpanla , Kpomo etc ooooooooo mucheche Hahaha 😂

Semi easy pass Eva for me sef only that it takes too much time to really make it firm, well cooked and solid. I can also do Dubai working guys style sha and it will be partially nof fully done but hard like stone. Ugandan/Kenyan style sef dey but pot dey too burn.

In my opinion, wheat is crazier with lumps than Semo

l recalled that I ate Ugali in East Africa during one of my visits, it looks like Lafun abi Amala.

I also ate Casava leaf 🌿 vegetables, it is a good delicacy in East Africa especially amongst Congolese ooooo 😜

What technique do you use to get yours perfectly?

If you've live in the Northern part of Nigeria, making semo won't be problem.

Use this technique:
Once the water on fire has boiled, fetch a handful of semo and mix it with water (not the hot water) stir it till it's smooth, then turn it into the hot water you had on fire and stir for a minute. Cover it and let it boil for a minute or 2, then star adding your semo bit by bit and stir as you add until you have the texture you want (soft or hard), then add a little water, cover it and let it cook for 2-5 minutes so it can cook properly.

With this method your semo will never be seedy

And it can show even some of the otherwise-best cooks shege, time after time. If it’s not lumpy, it’s watery, and-so-on. Where do you fit on that spectrum, or is your semo. smooth and flawless every time?

Mine is always flawless. It just requires knowledge of the right technique of making it.

That Ugali is actually semolina. But they do mix it just like some of us do in Naija. One of my flatmates used to do that. Did you eat their bean soup and salted fried fish?

Yes, l did but I don't like the way they use beams as sauce to eat matoke or posho tongue

Na office dey feed me this one. I think they use an industrial dough mixer. It comes out perfect every time. It was either this, tasteless wheat or bland eba. I had to force myself to eat it. Na akpu or poundy sure pass. On my own, whip out a mortar or food processor and run poundy. No time.

Eba is my thing sha followed by starch

Very easy to prepare if you start it as a paste. Dissolve it in water to have a consistent thick fluid. Place it on low heat and stir continuously as it boils. Add water and more semo powder as required. When fully solid, add water and allow to boil for another 3 to 5mins. Then beat hard together. You will get it right every single time using this method.

Above is applicable to Amala as well. Always start troublesome swallow as a paste.

You're right, Semo contains lots of sugar.

As a typical Ibibio man, I love my fufu (in the absence of Eba). But since I moved to Nairobi, fufu no Dey, garri come scarce cos either we import from
Nigeria of we buy from Congo people trading on West African food stuff here in Kenya, even at that, the garri no be like from back home.

So the day, I spotted Semo at Naivas, I nearly throw back fling inside Naivas, and since I been don perfect my hand to dey prepare Ugali (maize flour) for here, as I handle Semo, I finish work. Just add small ororo, so that e goo smooth for hand and e no go too stick on your pot.

it tasted surgery because the water wasn't hot enough. It can make you purge for days as well

For me semo is healthier than garri. Garri triggers my heartburn like mad.

Plus, from the comments here. Sounds like many people don't know how to make semo. My semo is always smooth and non-sugary.

This is how I prepare mine to be smooth and not too soft.

I add groundnut oil to the water I'm boiling. The water shouldn't be much.

Add the Semo to a bowl, also add some water and stir until smooth, as if you're making custard.

Once the water is boiling properly, add the Semo and turn. Keep adding dry Semo to the right texture you want.

Now the oil we added earlier ensures the Semo doesn't stick to the pan and it's smooth too.

Try and lemme know how it goes.

Every since I replace garri with Semo, I've never looked back.

Made it just twice, I think...

Last time, it was watery like pap, I just added sugar and milk to it and ate it with bread

Since then, I respected myself and stuck with garri... I still get like two bags wey them use ta mi l'ore for December... That one Na eyes wey see go carry
