home made jollof rice no matter the ingredients can never taste like party jollof rice. Maybe because of the firewood or the so many hands. but whichever way party jollof rocks!

I've always wanted to know how they cook Nigerian party rice. I actually cooked something very similar recently and i don't know if it's because i used only tin tomato as opposed to fresh tomato.

The smoke from the firewood. I have a Jamaican friend who also tried to smuggle a special kind of firewood for smoking chicken in jamaica to Canada. It was seized at the airport. I believe there are woods with that gives out some special smoke when burnt. This smoke adds flavour to the food .

Buy a cheap gas cooker that has two points of cooking food.....this gascooker is very powerful.It really burns.
When cooking the rice,allow it to burn a little

Have you forgotten so soon when rice was eaten once in a week - on Sundays.

it's the sweat from the women that drops into the pot during the stiring phase of the rice. the result is onerous .


when my mum cooks it alone, we don't get that unique taste, but when she and those other women stir the rice while their sweat drops in (with gusto), the taste comes out unique.. go figure

Jollof rice must be eaten HOT! Else me I no go value the taste again o.

Wait o. All those mama put jollof, I hear say those mama dey piss inside.

And those mama put too dey fat. I never see slender one for my life and Orobo pubic area no dey neat. Chai! Make God purge my belle o.

Ginger and garlic- adds to the flavour and taste. (Although,some cooks don't add garlic)

Bay leaf - flavour

Giant tin tomato paste - the colour(red) and flavour

Plus, lots of curry and tyme.

If you want your jellof rice to taste like "party" rice, just make sure you add enough ginger to the fresh pepper and tomatoes,then grind together.
Also, your tomato paste has to be more than enough.
Then, don't be stingy with your curry and tyme.

Over the top ingredients in moderation is "party jellof rice"

You don't need "white maggi" like vedan and all those, knorr is ok.
You don't need firewood also, use your gas cooker.

Its simple just colouring

Ajinomoto + firewood smoke is the secret.

Some one besides me say it is Rotten Tomatoes, and cited why Mama Put stew also taste same... hmm!
Abi who eats those rotten tomatoes been sold in the markets?
Hmm! Party Rice too much oh. . . I made conscious efforts to carry Take away home ....
Been trying to figure out too, but the best I get is consciously letting the rice burn a little.
