Please help. What is the secret of party jollof rice, because there's this flavour that's always there.

I don't know if it's the magic of bayleaf or curry and thyme... or is there any other thing?

Please help with the secret. Thanks
the flavour is to burn the rice, burn it very very well. that is what gives it that flavour.

Re: The Flavour In Party Jollof Rice by Xerum(m): 6:05pm On Mar 16, 2015
Pple. I hv done sm liittle research into this in the past too. Our conclusion was that it is that slight taste of the burnt buttom of the pot where all the ingredients come together & get slightly burnt, wch then sort of gets deployed to to form the dominating lovely smell & taste. To check this, try cook jollof rice wthout the slightly burnt buttom, u'll see that the magical yummy taste & smell will not be present. tongue

It is the tomato paste and burned smell from burned rice at the bottom of the pot.

It is curry and lots of it. And don't use red oil to cook, rather use Turkey or groundnut oil. I tried it like a million times before i finally got it right wink.

You just mentioned it! Firewood or charcoal! I once worked in a fast food where we resorted to using charcoal when gas was scarce but we found out that the taste of the jollof rice became better, hence we didn't go back to the use of gas for jollof rice even when gas became available!
Great! Always suspected that.

I really don't think it is because of firewood.

I will say Party Jollof Rice distinctive flavor is embedded in the procedure or the methodology of preparing it.

You can check this site for replicating Party Jollof Rice at home http://www.dooneyskitchen.com/2013/05/28/party-jollof-rice/
