Please I would like to know the best payment gateway that I can integrate on my site (php site) which will allow people to download products from my site after making payment without my involvement or anyone's interference

Sure, you don't need to develop any plugin for it because they already have official plugins for most popular CMS like WordPress, Prestashop, Magento, Shopify and some few others..

But if you are not using a CMS but coded your website by your own, you can surely integrate paystack to your website using php.

Its a combination of PHP and Ajax (Asynchronous javascript and XML).. You can follow the link the guy above me posted. But don't get it twisted bro, it doesnt take just a few minutes like he said. If you are a developer, you will surely understand what I'm talking about. There's more to it. I believe your products have unique prices and as such, you have to work it out all the way from your shopping cart up to the payment processing stage..
