Done with ERGO PROXY and I still don't get it

I didn't get most of it till I watched a second time.

The basic plot is that humans messed up the earth some thousand years ago after drying all the resources

The surviving humans escaped to space in a spacecraft

They created modified humans and started the Proxy Project

They built domes on earth to house the modified humans

Dome humans and Proxies unknowingly have to restart the ecosystem for the real humans, the "Creators" and die off when they have fulfilled their purpose.

That's the overarching plot simplified, it's far deeper than that especially when you start getting into the characters

Sony is going into the anime world hard, don't be surprised if by the next two years you see a Kimetsu no yaiba ps5 exclusive game. Those guys are trying to merge gaming, anime, and movies toghether.
