So i present you with the secret formula to clone the world's
be slaw.

Ingredients:

1/2 cup mayonnaise
1/3 cup granulated sugar
1/4 cup buttermilk
1/4 cup milk
2 1/2 tablespoons lemon juice
1 1/2 tablespoon white sugar
1/2 teaspoon salt
2 tablespoon onion (minced)
1/8 teaspoon pepper
8 cups cabbage (finely chopped)
1/4 cup carrot (shredded)

Procedure:

Make sure the cabbage and carrots are finely chopped to pieces (about the size of rice grain)
Combine the mayonnaise, sugar, buttermilk, milk, lemon juice, vinegar, salt and pepper in a large bowl and beat until smooth
Add the cabbage, carrots and onion. Mix thoroughly
Cover and refrigerate for at least 2 hours before serving

With everything getting so high in price at the grocery store, you may need to start making some
of your own.
To prepare this recipe here's what you'll need;

Ingredients:

4 pounds chicken carcasses (including necks and backs)
1 large onion (peeled and quartered)
4 carrots (peeled and roughly cut
2 ribs celery (roughly cut)
1/2 tablespoon salt
10 sprigs fresh thyme
2 bay leaves
8 to 10 peppercorns
2 whole cloves garlic (peeled)
1 gallon cold water

Procedure:


Put all the ingredients into a large pan

Add water and bring to boil

Skim off any scum that has formed on the surface. Cover and simmer very gently for 2-3 hours

Remove from heat and strain into a large bowl

Allow to cool and chill overnight

Skim off any fat that has formed on the surface again

You should use your stock within 3 days or freeze it

To freeze, divide the stock into two and boil vigorously. Allow to cool and then pour into ice-cube trays and freeze
When frozen put the cubes into a bag, (you may want to label it) and then if you want to use, just take one or as many as you desire, put in a jug and add boiling water to dissolve the cube

The combination of unique ingredients make this chicken dish delicious. It roasts beautifully and is
surprisingly fast once it's in the oven, plus the leftovers are fantastic for sandwiches and salads.

Servings: 5-6

Ingredients:

2 teaspoon salt
1 teaspoon white sugar
1/8 teaspoon ground cloves
1/8 teaspoon ground allspice
1/8 teaspoon ground nutmeg
1/8 teaspoon cinnamon
1 whole chicken (4 pound)
5 cloves garlic (crushed)

Procedure:

In a bowl, mix the salt, sugar, cloves, allspice, nutmeg, and cinnamon.
Rub the chicken with the mixture. Cover chicken, and place in the refrigerator for 24 hours.
Preheat oven to 500 degrees F (260 degrees C).
Stuff the chicken cavity with the garlic. Place the chicken, breast side down, on a rack in roasting pan.
Roast 15 minutes in the preheated oven. Reduce heat to 450 degrees F (230 degrees C), and continue roasting 15 minutes. Baste chicken with pan drippings, reduce heat to 425 degrees F (260 degrees C), and continue roasting for 30 minutes, to an internal temperature of 180 degrees F (85 degrees C). Let stand 20 minutes before serving.

Homemade Yogurt (yoghurt) is a healthy source of protein, calcium, magnesium, and other essential vitamins, whose active bacterial cultures aid in digestion. You can make yogurt in your own home for a fraction of the cost of the typical store-bought type and it requires no special equipment (other than a thermometer). This laid down recipe will guide you through the steps of making your own homemade yogurt, using photographs and simple instructions.

Like most things homemade, the home made yogurt tastes better, it has no preservatives, sugar or chemicals added, it is less expensive and there is no packaging waste

Despite the proliferation of yogurt makers in the market, everything you need to make homemade yogurt is probably in your kitchen with the possible exception of the thermometer,. They are listed bellow;


1 gallon of milk (a gallon = 16 cups, and 1 cup = 250ml)
2-3 tablespoon of plain yogurt (as a starter)
1 large metal or plastic spoon
1 medium pot with lid
1 dial thermometer (with clip and range of at least 100 degrees to 180 degree F)
1 heating pad
The amount of yogurt you will make depends on the amount of milk you use (1 gallon of milk will produce i gallon of yogurt). You can use regular, reduced or no fat milk.

For your first batch, you will need to purchase plain yogurt with active cultures (all other future batches you will use your own). Alternatively, you may use freeze-dried yogurt starter cultures.

The smaller pot needs to fit inside the larger one (as shown in the picture above), creating a double-boiler or water jacket effect. it's not required but highly recommended.

Your spoon needs to be plastic or metal, so it can be sterilized

Create a Water Jacket

While not required, but this step will save you time, and ensure consistent results every time out. Further, it prevents you from scalding the milk, which will ruin your yogurt.

Place larger pot in sink
Place smaller pot inside it
Fill larger pot with water until the water line is about half way up the side of smaller pot
The smaller pot is going to want to float on you, so hold it down with you other hand while filling larger pot with water

Don't fill the larger pot more than half way up the side of the smaller pot

Make sure you have your milk and 2-3 tablespoon of yogurt out at room temperature throughout the following steps

Sterilize Equipment

You could probably skip this step, but since you need to bring your water to a boil anyway, it removes any possibility of contamination.

Place your thermometer and spoon in the large pot of water
Place smaller pot upside down over larger pot
Heat water until boiling
Once a boil is reached, use oven mitts to remove hot items, and dry with paper toweling.

If you have a set of tongs, use them to quickly sterilize the smaller pot lid by dipping in boiling water.


Add Your Milk
If you do not have a set of pots that fit into each other, you could heat the milk directly but you would need to watch it constantly.

Place the smaller pot into the larger pot of boiling water
Carefully pour your milk into the smaller pot
Clip your thermometer to the rim of the smaller pot
The smaller pot is going to want to float when empty, so pour very slowly

Once all your milk is in, check to see that water level in larger pot and milk level in smaller pot are about the same. Too much water, and the pot will float, too little water, and you won't heat the milk evenly.

Add or remove water if there is a big discrepancy

Ofada gets it name from the locally produced rice which is a special delicacy of the Western part of Nigeria.

It is usually served with Ofada Rice. The sauce itself is called Ayamase, the pairing is however so perfect that when people talk about Ofada Rice they are automatically associating it with the Ayamase.

Ingredients;

4 large green bell peppers (finely chopped)
2 large red ball peppers (finely chopped)
10 pieces of unripe habanero peppers (finely chopped)
1 big red onion (finely chopped)
1kg of assorted meat (Goat meat, Shaki, Ponmon, Beef, Stock fish)
2 cups of palm oil (or more)
2 stock cubes (maggi)
1 teasopoon of salt
1 locust been (a.k.a. iru, ogiri, okpei or dawadawa)
1/2 cup of crayfish
3 cups of ofada rice

Procedure:

To prepare the ofada rice;

Wash the rice with cold water, transfer to a cooking pot and parboil for 10 minutes
Drain the water using a sieve and wash again thoroughly preferable in running water

Put the pot back of fire and add water just enough to cook the rice till its done
Add a pinch of salt, then pour in the parboiled rice when the water begins to boil.

To prepare the ofada stew:

Wash and blend all the peppers and onions
Blend the crayfish and locust bean using a dry meal , or you could preferably pound them if you have a mortar

Wash all the assorted meat properly and cook them until they are properly done, add the stock cubes to the meat

In a separate pot, pour in the blended pepper and cook until all the water dries up (this should take about 20 minutes on medium to high heat)
Place a clean dry pan on medium heat, pour in the palm oil and allow to blanch for about 15 minutes (the time may vary depending on your cooker and amount of oil. It will definitely get smokey, so have a fan around or make sure the kitchen is well ventilated, better still you can do this outside in the open)

Allow it to cool down for about 5 minutes, thereafter add in the cooked pepper puree, and fry very well until the water is dried out (stirring always)

Add in the blended crayfish and locust bean together with the cooked meat and give it a good stir
Add salt, stir and leave to simmer for another 2 minutes, and it's ready to be served

Serve with the ofada rice, to get the real effect and delight, line the plate with either uma leaves or banana leaves

Suya is widely sold in Nigeria, originating from the North. Suya is one of the best things that ever happened to grilled beef or lamb or goat or chicken.

In the middle East, they have Kebabs, In Malaysia, they have Satays, but we are proud to have Suya here in Nigeria. The characteristics of Suya is that the marinade includes a must have ingredient "Kuli Kuli Powder" also know as grounded peanut powder (with the excess oil stripped off).

Suya is normally served wrapped in newspaper (mostly when bought from the Hausa Suya Makers) and foodgrade plastics, served alongside, raw onions, tomatoes and sometimes cabbage, fried chips, bitter lemon, and jellof or fried rice.

I am not a fan of raw onions so I mellow the taste by soaking it in water for about 5 minutes. I also tossed the diced tomatoes with finely chopped coriander just for a more vibrant color.
To prepare this recipe, here's what you need.

Ingredients:

500g beef fillets (or as desired)
Suya sticks (as much as possible)
1 cup of roasted peanuts (a cup = 250ml)
1 teaspoon dry grounded pepper (chilli or cayenne)
1 teaspoon paprika (optional)
1/2 teaspoon ginger powder
1/2 teaspoon garlic powder
1/2 teaspoon onion powder (optional)
1 teaspoon of salt
1 stock cube (maggi) (optional)

Procedure:
Soak the suya sticks in cold water for at least 5 hours so that hey do not char during grilling

Blend roasted peanuts to a fine powder

Transfer the powder to a medium and bowl, add in the grounded pepper, paprika, ginger, garlic, onion, salt and stock cube

Mix thoroughly to have your Suya Spice (also known as Yaji in Hausa). I usually use a mixer or add in the ingredients to the already blended roasted peanuts and blend further, so that it will mix well

For the beef fillets, they need to be thin (it will be better if your butcher have the appliance for this purpose but if not just do your best and cut the beef into thin fillets using your kitchen knife)

Cut the fillets into short pieces so that they do not flap too much when you thread them on the sticks
Thread the pieces of beef on the pre-soaked sticks

How To Prepare KFC Fried Chicken

I present to you your favorite Kentucky Fried Chicken Recipe. Very near to original taste, indeed this crispy and tender chicken recipe is a must try, do give us a feedback when you make yours.

Ingredients;

4 chicken pieces (drumstick, wings, breast)
2 litres of vegetable oil
1 cup of plain flour
3 tsp salt (for soaking)
1/2 tsp salt
1/2 tsp ground pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp paprika powder
1 egg
1/2 cup of milk


Procedure:
Add the 3 tsp of salt in a large bowl, add enough water and place the chicken in it to soak for approximately 30 minutes
Beat the egg in a small bowl and mix with the milk
In another bowl, pour in the flour, add pepper, garlic, salt, onion, and paprika, and mix very well
Remove the chicken from the water and dry with paper towel
Using your hands pick up the piece of chicken one-at-a-time and dip it first into the egg & milk mixture turning it around to make sure it is well coated with the mixture
Then immediately dip it in the flour mixture turning it around to make sure it is also well coated in it
Then dip it back again for the second time in the egg & milk mixture and back again in the flour mixture, making sure that it is well coated.
Do this for the rest of the chicken pieces making sure that it is completely covered and well coated in the mixtures during each step

In a large pan heat the oil until hot and ready for frying
Carefully add in your coated chicken pieces one by one and dip fry for about 15-20 minutes, depending on the size of the chicken pieces until it they turn out golden brown. Do not forget to turn it occasionally
Now KFC uses pressure cookers to fry their chicken which i don't recommend you do at home, especially if you have kids around

Remove from heat and drain in paper towel
Serve and enjoy with your family. It turns out very crispy

I am a very big lover of condensed milk, and i'm going to share with you how I make mine at home. It's very easy and gonna save you lot's of money.

Ingredients;

125g butter
1 cup of sugar
1 cup of boiling water
4 cups of skimmed milk powder (or less)

Procedure;
Pour butter and sugar in a blender, add the boiling water and blend very well.

Add the skimmed milk powder, 1 cup at a time blending after adding each cup until finished

And that's all it takes, it may look very water but will thicken when it cools down.
Pour into a jar or container with lid and refrigerate.
