Try oat flour. There are several varieties in the market. Also potato flour (sweet potato) if you can find that. acha is very good too. English name is fonio aka hungry rice.

Abstract
acha or fonio is a popular cereal consumed by the diabetics' subjects and it contributes substantially to the total food intake of the diabetic subjects in Nigeria. It has become very expensive as the only major acceptable carbohydrate food and therefore it is necessary to determine its glycaemic index and load of acha among the Type II diabetic and healthy control subjects. Ten volunteer Type II diabetics and seven healthy subjects consented for the metabolic studies. Fifty grams available carbohydrate of acha (Digitaria exilis Stapf) meal and okra (Abelmoschus esculentus L Moench) soup was used as test food while 50 grams of glucose served as the reference food. The blood glucose responses were used to calculate the area under the blood glucose curve (AUC) to determine the glycaemic index of the meal. The percentage of carbohydrate in the meal multiplied by glycaemic index was equal to glycaemic load. The glycaemic index in Type II diabetics and healthy subjects were found to be 49 and 35 respectively. The glycaemic load of acha meal was 17.5 for control groups and 24.5 in Type II diabetic subjects. The Glycaemic index (GI) of acha meal is low in both Type II diabetics and healthy subjects. The glycaemic load of the acha (D exilis ) meal is just enough for control and high for the Type II diabetic subjects. The GL could explain why despite the consumption of acha by Type II diabetic their blood glucose could not be controlled because they regularly consume it in their homes more than the portion size served in this research. Therefore, it is necessary to adjust the quantity of acha (D. exilis) meal consumed by diabetics' subjects.

He Was Using Plantain Flour But He Complained Of Constipation And He Stopped Using It. . . He Was Also Using Wheat Flour But He Stopped Due To Some Health Complications (I Think Something Concerning Blood Group O+).

Any Advice Or Experience Will Be Appreciated.

Unripe plantain flour(the constipation may be because it's not well cooked. After moulding it into a solid paste, its supposed to be left to cook on low heat for about 15 minutes. Also the mixture shouldn't be too solid because it solidifies upon cooling)

*Pilaf fonio Recipe
In fry oil, brown meat thin sliced onions, garlic and parsley crushed, tomatoes peeled, deseeded and cut and the tomato purée. Add salt and add 2 liters of water, spices and herbs and simmer for about 1 hour. At mid-time cooking, add vegetables washed and regularly cut. Take out the vegetables as they are cooked and set aside in a serving dish. Cook the meat well and take one to two ladles of bouillon and remove the meat. Add to the vegetables and keep it hot. “Sprinkle” precooked fonio in the remaining bouillon while stirring; the bouillon must cover fonio. Cover the cooking pot and simmer while stirring from time to time. Serve hot with vegetables, meat (chicken or fish).

Health and Nutritional Value of fonio Grain
• Highly rich in amino acids and iron, its tiny grains are very nutritious for pregnant women and children.
• The husked grain of fonio contains 8-10 % proteins, 85% carbohydrates, 4% fats and 1% ash.
fonio grains are immensely rich in methionine, cystine and other amino acids which play a vital role in nourishing human health. These nutrients are missing in today's major cereals.

In furtherance of the Federal Government’s quest to promote agriculture as the bedrock of the economic diversification agenda, the Standards Organisation of Nigeria (SON) has coordinated the drafting of five new standards on indigenous foods.

The ongoing development of the Standards also promotes the application of research and technology to boost the production of foods for local consumption and export.
Disclosing this view at the first technical committee (TC) meeting on food technology standards in 2019 held in Lagos, SON Director General, Osita Aboloma Esq. stated that the development is to further the Nation’s quest to be at the forefront of promoting indigenous production of food.

According to him,  the technical committee meeting is to also reiterate Nigerian stakeholders’ relevance in food standardization.

Represented by Dr Mrs Omolara Okunlola,  SON Group Head, Food Technology,  he advised the TC members bring their expertise and rich experience to bear on the drafting of the Standards in order to make them practical and easily implementable by Stakeholders after approval and publishing.

These according to him will provide the necessary guide to manufacturers, promote fair trade practices and assist statutory regulatory activities.

Aboloma enjoined the committee to critically consider issues bothering on food safety, food quality and fair trade practices so as not only to strengthen the economy but to enhance the productivity of the food sector.

Dr Okunlola listed the five new standards as;• Standard for packaged Millet flour for pap

- Standard for Corn Pap powder
- Standard for packaged Sorghum powder for pap
- Standard for fonio flour (acha flour)
- Standard for acha

The TC Chairman, Prof Charles Ariahu of the Department of Food Science and Technology, University of Agriculture Markurdi promised that the committee will carry out its responsibilities diligently.

He enjoined members of the TC to ensure strict compliance with the Standards development guidelines and endeavour to contribute their opinions and positions freely.

According to him, some of the products to be considered are indigenous, have been in existence over the years and are already being traded across borders thus necessitate approved specifications to serve as benchmarks.

Institutions represented at the TC meeting include Promasidor, Federal Produce Department, Consumer Protection Council (CPC), Federal Institute of Industrial Research, Osodi (FIIRO), NASCO Foods and the National Agency for Food Drug Administration and Control (NAFDAC).

Others were the Federal Ministry of Agriculture and Rural Development,  OLAM Foods, Institute of Public Analyst of Nigeria (IPAN), Nestle Foods and the Federal University of Agriculture, Abeokuta (FUNAAB) while the SON provided the Secretariat.

It has become more expedient that we pursue the diversification of Nigeria economy with a strong sense of focus . This is not only a clarion call for the government alone but for her citizens as well.
One of sector clearly underutilized is the agricultural sector. As a country we are sitting on a very fertile land space that produce one or more agro produce every season . In the next two to three months the harvesting season will be here.
A trip into this villages where the harvesting is done, will reveal the level of wastage that occurs as a results of lack of storage facilities and lack of infrastructure. There are villages that one can get a basket of tomatoes for as cheap as N150, also, there are villages where one can get a bag of fresh pepper for N 2000. The farmers are stranded when they can’t effect sales. It is establish that there is over 60% wastage on veggies and fruits in the county.
The idea behind this write is to take a critical look at some agro produces in Nigeria and how value( simple processing) can be added and turn them into simple product that are highly demanded.

There is a fine grain that is called acha(Hungry Rice) and it is very rich nutritional and it is clearly fully utilized except by the local in the middle belt . acha is a grain that can be converted into package cereal,it can also be processed into flour that will be serve as Custard. This same product can be processed as baby food . acha has three variety in Nigeria, we have the white, black and brown. Our concern will be on the white and brown variety.
The importance of this crop
acha ( fonio) is gluten free, this makes it better than wheat and corn which contains gluten. It also aids digestion by these it is good for babies, children and elderly people. It helps cardiovascular function and it is good for diabetes. It is very for weigh loss.
Processing of the Asha
Depending on which final product you want to get from acha(fonio) the processing of fonio is easy because one only needs to mill, sieve and this is where creativity comes into play. It has become more expedient that we pursue the diversification of Nigeria economy with a strong sense of focus . This is not only a clarion call for the government alone but for her citizens as well.
One of sector clearly underutilized is the agricultural sector. As a country we are sitting on a very fertile land space that produce one or more agro produce every season . In the next two to three months the harvesting season will be here.
A trip into this villages where the harvesting is done, will reveal the level of wastage that occurs as a results of lack of storage facilities and lack of infrastructure. There are villages that one can get a basket of tomatoes for as cheap as N150, also, there are villages where one can get a bag of fresh pepper for N 2000. The farmers are stranded when they can’t effect sales. It is establish that there is over 60% wastage on veggies and fruits in the county.

Recipe for Stir Fried acha

Ingredients

1 Cup of acha

1 Cup of mixed vegetables

2 medium sausage links ( You can use shrimp or chicken)

A small bulb of Onion

1 chicken seasoning cube

One teaspoon of Curry Powder

Pinch of thyme

A teaspoon of black pepper

One scotch bonnet pepper

1 tablespoon of butter

2 tablespoons of olive oil

Method

Wash your acha and set aside.

In a pan, pour in your butter and 1 tablespoon of the oil and stir fry your vegetables. Add in the chopped sausages. Season with half the seasoning cube.

Take out the vegetables and set aside and in the same pan, pour in the rest of the oil and stir fry the acha on low heat for about 1 minute. Add your curry powder, black pepper, thyme and seasoning cube and stir the acha properly.

Toss in the vegetables immediately into the pan and toss all together. Taste for seasoning and serve your stir fried acha hot.

Quinoa, unknown to many just five years ago, is a grain many American families now consider a weekly staple. But the cost of our food fads can impact the very farmers that bring us those crops. As it turns out, I ate fonio (pronounced phone-yo), unknowingly when I visited West Africa in 2003. I didn’t know what grain I was eating, but it was a staple at every single meal.
