Each leaf sheath has a knot. Peel up to 2 mm above the knot. Remove the sheaths one by one, generally 3 to 5 layers. The pseudostem should be cut back to 1 to 2 cm above the stem’s last visible knot. Make a right-angled crosscut on the bud at the starting point of each leaf sheath.

The success of the procedure depends on this stage. Note that the base of the plantain plant has a conical pseudostem formed by the leaf sheaths of its spirally arranged, long, thin leaves. Peeling involves remo-ving these leaf sheaths one by one. At the level of the bulb, there is a light-coloured band (the colour depends on the variety) that attaches each leaf sheath to the bulb; this is called the knot. Each leaf sheath has a knot. Commercial production and marketing of fried green plantain and banana chips has been increasing in various parts of the world over the past 25 years and these products are commonly found in retail groceries alongside potato chips and other snack foods.

The desired pieces of the plant are usually planted 30–60 cm (11.8–23.6 in) deep in the soil and should generally be planted at the end of the dry season or the beginning of the wet season. Plant spacing is dependent on the cultivar being planted. Frequent weeding is required until plants are tall enough to shade out competing plants and should be started about 6 weeks after planting. Plantains are fast growing and require the frequent addition of nutrients as well as additional irrigation in the dry season. Plantain is often grown alongside other crop plants with similar requirements, indeed, the young banana plants make excellent 'nurses' for other crops such as papaya or cocoa which can be grown very close to the young plantains.

Plantains are typical climacteric fruits in that they exhibit a well defined preclimateric phase after harvesting during which the fruit remains unripe, the basal respiration rate is low and ethylene production is almost undetectable. The respiratory climacteric commences spontaneously and there is a rapid and well-defined rise in respiratory rate which is closely synchronized with evolution of ethylene, with chlorophyll breakdown in the peel and with starch to sugar conversion and tissue softening in the pulp (Marriot and Lancaster, 1983; Ogazi, 1996).

PREPARE THE LAND/SOIL FOR PLANTING PLANTAIN BY Sedulus Plantain Farm
www.sedulusplantainsucker.com.ng

After acquiring a land for the plantation you will need to carry out land preparation activities on the land. These activities include clearing the land of bushes, trees, stones, stumps, etc. Land preparation also involves tilling the land and application of manure to improve land fertility (for less fertile land).

The ripe banana is utilized in a multitude of ways in the human diet, from simply being peeled and eaten out of hand to being sliced and served in fruit cups and salads, sandwiches, custards and gelatins, being mashed and incorporated into ice cream, bread, muffins and cream pies (Adeniji et al., 2006). Ripe plantains are often sliced lengthwise, baked or boiled, and served (perhaps with a garnish of brown sugar or chopped peanuts) as an accompaniment for ham or other meats.

The growing tip (or meristem) at the top of ·the corm continuously forms new leaves and later becomes the inflo-rescence. The corm produces many branches, called suckers, and the whole unit is often referred to as the "mat" or "stool". After the plant crop has been harvested, the mother plant is cut down and the suckers are thinned.

Plantations should be regularly monitored for presence of disease; if Moko is present, male buds should be removed and all tools thoroughly disinfected; infected plants may need to be destroyed along with any neighbouring plants.
