Fonio is a rare, ancient grain, originating from small pockets throughout Africa. In short, Fonio is a gluten-free grain with a low glycemic index (making it diabetic friendly), containing many amino acids. It is also a plant based source of Magnesium, Zinc, Thiamine (Vitamin B1), Riboflavin (Vitamin B2), Calcium, and Phosphorous!

Serves: 2 people
Ingredients:
100g of @tenizremedies fonio
100g of peas
1 zucchini
1 bunch of fresh coriander and 1 fresh mint
1/2 lemon
2 tbsp olive oil
3 drops Tabasco
3 eggs
salt and pepper
Method:
Rinse the fonio using a strainer with very fine mesh. In a saucepan, put fonio and 2½ times its volume in water, bring to boil, cook over low heat 10 minutes, then remove from heat and let swell for 5 minutes.
Cook the peas in water for about 20 minutes, let them cool. Wash and grate zucchini. Rinse the herbs. In a salad bowl, prepare the vinaigrette with the lemon juice, the tabasco, the olive oil, the salt and the pepper. Add the cooked fonio, the peas, the zucchini and the chopped herbs. Mix well.
In a bowl beat the eggs, season them, pour them into a warm, lightly oiled pan and cook for a few minutes. When the eggs are cooked, roll the omelet gently in order to obtain a roll. Slice the omelette and arrange it still warm on the tabbouleh. Serve immediately.

Acha is a cereal/ grain found in sub-saharan African from Senegal to (Northern) Nigeria and Cameroun. It bears a resemblance to couscous except it is a grain versus a milled durum wheat product, which couscous is. This enriched grain is so full of nutrients and very good for weight loss. An added advantage is that it has low glycemic index, thus making it favorable for diabetics.
