It was really a surprise that am yet to to recover from when I first handled an unsalted locustbean. Surprise too? Over the ages salt has only been the reason why it could last a week unless dried. Based on the constraint of preservation, the medicinal use of locust bean(Iru) became a mirage, as only the unsalted one could do the wonder of curing varing eye defects and a good suppliment for hypertensive patients.
More surprising is the wet salted locustbean(Iru) that has a shelf life of 3 months under ambient temperature. Unbelivable right?
