I read here today a thread on how to make Nigerian Jollof. After reading the instructions, I decided to share how Jollof is made in Ghana. Judgement is for those that will try both recipes. For the Jollof, you will need the following Ingredients 1 cup rice 3 medium sized fresh tomatoes I sachet tomato paste 4 pcs of pepper 1 bulb of large onion Garlic(depends on your taste) Salt Soya Oil Chicken/Fish Procedure Wash the garlic, onions and tomatoes with vinegar solution Blend the fresh tomatoes and pepper together. Blend the garlic and onions together. Place the resulting mixture in a bowl. Place about 5cl soya oil on medium heat fire and allow to heat. Add the garlic and onion mixture to the heated oil. Allow the content to boil until it starts to brown. Add the satchet tomatoes. Allow to cook for about 5 minutes (to rid the content of the funny taste that comes with tomato pastes ) Add the tomatoes and pepper mixture Leave the resulting content on low fire after adding salt. Wash and clean the chicken. Steam and keep the stock of the chicken. Remove the chicken when tender and fry. Put your chicken stock back on fire Wash and add your rice Cover and allow the content to cook for about five minutes. Now add the tomato sauce you prepared to the rice. Stir the content and cover for about a minute Add a cup of water and allow to cook. There you have it Yummy!
