CAPRESE STUFFED AVOCADO
3 large ripe avocados
¾ cup cherry tomatoes halved
¾ cup fresh mini mozzarella balls
3 tbsp basil chiffonade
1 tbsp olive oil
salt and pepper to taste
balsamic glaze

Slice avocados in half. Take avocado halves and carve out flesh, leaving 1/4 inch perimeter of avocado. Take the scooped out flesh and dice into cubes. Reserve ¾ cup for the salad. You can use any remaining in another recipe.
In a medium bowl, combine tomatoes, mozzarella, avocado cubes. Drizzle with olive oil and season with salt and pepper. Toss until ingredients are evenly coated in oil.
Stuff avocado shells with caprese salad. Garnish with basil. Drizzle balsamic glaze over each avocado half.

CLEANSING APPLE AVOCADO SMOOTHIE
1 cup plain unsweetened almond milk
4 cups loosely packed spinach — that's about 2 large handfuls
1 medium avocado — peeled and pitted
2 medium apples — any kind you like, peel on, cored and quartered (if not using a high-powered blender such as a Vitamix, cut into a rough dice)
1 medium banana — cut into chunks and frozen
2 teaspoons honey — or maple syrup plus additional to taste
1/2 teaspoon ground ginger — or 1/4-inch knob of fresh ginger (if not using a high-power blender, mince the ginger first; use less than 1/2 teaspoon if you'd like a more subtle taste. This smoothie has some zip!) Small handful of ice cubes

Optional additions: chia seeds — flaxseed, protein powder, almond butter or other nut butter of choice.

In the order listed, add the almond milk, spinach, avocado, apples, banana, honey, ginger, and ice to a high-powered blender. Blend until smooth. Taste and adjust sweetness and spices as desired.

Enjoy immediately.

Avocado Mousse Dome (makes 8 Half-domes)

These avocado mousse-topped butter cookies are all encased in a shell of hardened, unsweetened chocolate. .
INGREDIENTS:
Avocado Mousse Ingredients:
1 ripe avocado
One 8 ounce bar of cream cheese, softened
1 teaspoon lemon juice
1 teaspoon lime juice
3 tablespoons powdered monk fruit (or use Lakanto)

Butter Cookie Crust Ingredients:
½ cup almond flour
1 tablespoon coconut flour
½ teaspoon baking powder
1 ½ tablespoons granulated monk fruit - we used Lakanto
1 ounce butter or coconut oil
1 egg
.
Extra Ingredients:
4 ounces unsweetened melted chocolate
Dome Mold
.
INSTRUCTIONS:
For the Butter Cookie Crust:
1. Preheat oven to 175 C.
2. Whisk together almond flour, coconut flour, baking powder, and granulated monk fruit.
3. With a rubber spatula, mix in oil and egg.
4. Place on a baking sheet in a rectangle about ½ inch thick.
5. Bake for 12 minutes, or until hardened. Once they have cooled, cut out four 2.5″ inch circles.

For the Mousse:
1. Using a hand mixer, beat the cream cheese and powdered monk fruit until it’s fluffy.
2. In a separate small bowl, mash together the avocado, lime juice, and lemon juice.
3. Using the hand mixer, beat the avocado mixture into the cream cheese and create a uniform mousse.

Assemble:
1. Place the mousse into a piping bag with a medium round tip.
2. Pipe about halfway up the mold. Repeat on the other three molds.
3. Then place the cookie on top.
4. Freeze until firm enough to pop out; this should take about 30-40 minutes.
5. Once you have popped the domes out of the molds, place the domes on a wire baking sheet.
6. Smoothen any bumps and pour the chocolate over the bombs.
7. When the chocolate has set up (it will harden upon contact with the frozen domes), feel free to enjoy!
