There are two easy ways to change whatsapp default text style.
First way
1. To make font italic just add these signs before and after text:

2. To make it [b]bold [/b]use this:

3. To make text s̶t̶r̶i̶k̶e̶t̶h̶r̶o̶u̶g̶h̶ through use:

4. For monoscape use:
