Job Role: CONTINENTAL COOK

Job Type: Contract (Renewable)

Location: Port Harcourt

Primary Objective
To supervise and see to the safe and smooth running of the kitchen productions and serving of meals in accordance with the laid down rules and guidelines and international best practice

Key Tasks
1. Checks freshness of food and ingredients
2. Preparation of dishes for different nationalities – Europeans, Americans, Asian etc.
3. Setting and preparation of needed cooking ingredients
4. Supervise and coordinate activities of kitchen assistants and other food preparation workers
5. Develop recipes and determine how to present the food
6. Plan menus and ensure uniform serving sizes and quality of meals
7. Inspect supplies, equipment, and work areas for cleanliness and functionality
8. Train and supervise cooks and other food preparation workers
9. Order and maintain inventory of food and supplies
10. Monitor sanitation practices and follow kitchen safety standards

Minimum Educational Qualifications:
1. OND in Catering and Hotel Management
2. Alternatively, a senior school leaving certificate with not less than five (5) years’ experience as a continental cook.

Minimum Previous Experience:
1. At least five (5) years’ experience as a continental cook in a catering or hospitality outfit.

Minimum Additional Training/Certification:
1. Helicopter Underwater Escape Training (HUET) and Basic Sea Survival Training OR Basic Offshore Safety Induction and Emergency Training (BOSIET)
2. STCW Basic Safety Training
3. Seaman's Record Book and Certificate of Discharge
4. Seafarers Medical Certificate
5. Certificate of Proficiency for Seafarers with Security Awareness and Designated Security Duties (ISPS)
6. Ships Cooks Certificate of Competency (1&2)
7. International Passport

Other Skills:
1. Ability to speak English Language moderately
2. Writing skills is necessary
