INGREDIENTS

2 cups of white rice ( uncooked and preferably long grain)
3 tablespoon of extra virgin olive oil
2 cups of low sodium broth (chicken or vegetable broth will work)
1 cup of finely chopped onions (medium yellow onion)
6 tablespoons of lemon juice and 1 tablespoon lemon zest
