This yam I'm seeing won't be yummy, it's those rough and bitter taste yam.
Always look out for a rough and thick backs when selecting your yam.

As you can see in the picture below, it's very pure inside, outside is thick and rough. Our supplier call this type of sweet edible yam Gambari
