How to Make Masa (Nigerian Hausa Rice Cakes) By Milcah Tanimu **Ingredients:** - 2 cups of rice (short-grain or Tuwo rice) - 1 cup of cooked rice (Tuwo rice as well) - Water - 1/4 cup of sugar (adjust to taste) - 1/2 teaspoon of yeast - 1/4 teaspoon of baking powder - 1/4 teaspoon of salt - Vegetable oil for frying **Instructions:** 1. **Soak the Rice:** - Wash the rice thoroughly and soak it in water for at least 8 hours or overnight to soften it. Soaking the rice for an extended period softens the grains, making them easier to blend. 2. **Blend the Rice:** - Drain the soaked rice and add it to a blender along with the cooked rice and some water. Blend until you achieve a smooth batter. Adjust the water as needed to maintain a thick consistency. 3. **Prepare the Batter:** - Transfer the batter to a bowl and add the sugar, yeast, baking powder, and salt. Mix thoroughly to incorporate all the ingredients. 4. **Ferment the Batter:** - Cover the bowl with a clean cloth or plastic wrap and allow the batter to ferment for at least 2-4 hours or until it doubles in size. The fermentation time may vary depending on kitchen temperature and humidity. 5. **Check the Fermentation:** - Once the batter has fermented, it should appear bubbly and airy. Give it a gentle stir to incorporate the bubbles. 6. **Heat the Pan:** - Masa is traditionally cooked in a special Masa pan, but you can also use a non-stick frying pan. Ensure that the pan is adequately oiled to prevent sticking. 7. **Spoon the Batter:** - Spoon small quantities of the batter onto the pan, shaping them into circular rice cakes. Cook for about 2-3 minutes or until the Masa turns golden brown on both sides. Adjust the size according to your preference. 8. **Repeat the Process:** - Remove the cooked Masa from the pan and repeat the process with the remaining batter, adding more oil to the pan as needed. 9. **Serve:** - Serve the Masa warm with your choice of accompaniment. You can enjoy it with a spicy pepper sauce like Yaji (Suya spice), a traditional soup like Miyan Taushe or Miyan Kuka, or go for a sweet option with honey, maple syrup, or powdered sugar.
