Advice needed: i am conducting a research on plantain flour business from the scratch to the finished product / marketing, is it worth doing?

It depends, I have over 100 acres of Plantain planted with my oil palm on my farm and i had the idea of processing it, Plantain flour and Plantain chips came to mind, but out of the 2, I think plantain chips look more viable because it's only people with Diabetes and elderly people that eat Plantain flour, when you look at the percentage that will be able to pay for plantain Flour(It's more expensive than Yam Flour) , I concluded that it is not viable for me to do,
