Hello all I'm still trying to broaden my nigerian cooking skills ( ), but my hubby is not very cooperative I've heard about a dish that includes beans and corn, but that's all I could get out of him (guess it's not his favorite). Do you know about such a dish? What is it called in yoruba, and do you have a recipe? Tks, and if you have any other suggestion as what I should learn to cook next feel free to contribute! |

I've not been opportune to see or taste a Nigerian dish made with both beans and corn. I know moin-moin is prepared with only beans, and ekusu being quite the same thing is prepared with only corn. Hopefully the yorubas come in and help us out. |

I looked a bit on the internet and found that : http://www.9jafoodie.com/adalu/ http://littlemissgastronome..fr/2011/04/adalu.html From that website it is called "adalu" in yoruba and "Agua na Oka" in Ibo. It looks a bit like the beans I usually cook with plantain (but without tomatoes) This website has a slightly different recipe (with tomatoes) : http://www.foodandlens.com/2011/01/adalu-beans-corn-with-grilled-plantain.html I was thinking about something more different... thanks all for your replies I'm actually a bit disappointed since I was expecting a whole new dish, but it's just "beans porridge" with corn in it. |

Miss_Ife: thanks all for your replies Laughs!!!!! you have forgotten that beans is very boring, you only enjo it when you make moin-moin out of it. That beans and corn i love, very healthy, i add dry fish to mine when cooking it. |

good old days of being a kid growing up in the North! we all pound the corn to remove the skin for our friend's mom while singing alalube e . Mama Uwani made real good corn and bean meal!! so delicious. but i love her Kwaruru beans the more. i have eaten fresh corn and beans. Delicious! freshly harvest corn is one blissful summer night dream . so sweet with that red bean good ol' days. My Kenya roommate make corn and bean here but never like the one made by the Northern Uwas (mamas) |
