I have gotten acquainted to the food habits and preferences over here. Indian and Nigerian food are quite similar in many aspects high on spices, too many curries and both stock up on rice. Basically, a carbohydrate rich spread. Most times, post work I would find unique, local fruits and vegetables to munch on- these were so enticing. I sure did try many, they were a delightful treat, as I would call them a bunch of health hanging off the tree. Being a nutritionist I couldn’t stop myself from knowing these fruits more nutritionally, understanding their taste and adding them to my diet.

What you’ll need:
350ml warm water
Two tablespoons milk
Two tablespoons margarine
One teaspoon salt
550g bread flour
Three tablespoons caster sugar
Two teaspoons dried active baking yeast
170g raisins
Two tablespoons butter, softened
Two tablespoons dark brown soft sugar
One teaspoon ground cinnamon
One tablespoon butter, melted
How to make Cinnamon Raisin Bread:
Place water, milk, margarine, salt, flour, sugar and yeast in the container of the bread machine. Select cycle; press Start.

On the off chance that your machine has a Fruit setting, include the raisins when indicated. Or around 5 minutes before the kneading cycle has wrapped up.

Take mixture out after first kneading cycle completed. Turn dough out onto a delicately floured surface and take off into a rectangle. Spread batter with butter, sugar and cinnamon. Move dough, and split into two sections. Place pieces in two 450g tins. Cover and let rest in a warm place until multiplied in size, around 60 minutes.

Preheat oven to 180 C/Gas 4.

Brush rose loaves with melted butter and prepare in preheated oven for 30 to 40 minutes. Bake until outside is brown and rolls sound empty when tapped.

Once you’ve left your cinnamon raisin bread to cool, it’s ready to serve. Best served with butter and a warm drink on a cold evening. You can sprinkle a little bit of brown sugar over the top, too.
