When you mean they want to include documents do you mean they plan to accompany her along please enlighten us on that to get accurate answers.

No, I don't plan to travel with her. I live in the US. The person I want to sponsor is my sister's daughter (niece).
I am not her father.
I want to know the documents I should submit so that she can secure the study permit.

Please, know that I am only her uncle. But I went to school in Canada, and lived there before I migrated to the US.

She works at the bank so expect her to provide her bank statement of account and employment offer.
Is there any other document to submit?

I can comfortably sponsor her, but other members of the family also want to include their documents too since the have good jobs too. Is this an advantage or disadvantage?

3) Paying or not paying doesnt guarantee but paying helps to show genuineness towards your study pursuit.

2. When I traveled to Canada 8 years ago, I submitted my documents at VFS. Is it still the same thing?
