How To Cook Oto Mboro (Unripe Banana Porridge)

Oto Mboro is a porridge made with grated or pureed unripe bananas and vegetables. They are made with bananas which are good sources of potassium, vitamin B6, vitamin C and fibres.

Banana Porridge or Oto Mboro is a delicious and healthy food. It is is a native staple to the Efik and Ibibio tribes of Cross River and Akwa Ibom states of South-South Nigeria..

They are part of the food given to their young maidens who are confined in the fattening rooms. It is high in nutrients but quite low in calories. Oto Mboro is also seen as ideal healthy weaning meal for babies.

To take Oto Mboro a notch higher, leave it overnight in the fridge, then warm adding little palm oil and eat the next day. During this warming, a toasty crust forms at the bottom, making the taste similar to the treasured socarrat at the bottom of the Spanish paella.

Since groundnuts (Peanuts) are rich in protein, it should be featured greatly in our daily diet. In order to get a good nutritional benefits out of groundnuts (peanuts), without chewing is drinking Groundnut Milk.

Notes on the ingredients
If you do not intend to boil the milk, make the quantity you can finish or use refrigerator. You can derive 600mls of Groundnut Milk with 300g of raw groundnuts.
Use peeled raw groundnuts (peanuts). But if you have the unpeeled ones, (check Step 1 in the directions for how to remove the skin).
When blending the soaked peanuts (Check Step 2 in the directions below), Add enough water to enhance proper blender blade movement. More water will still be added later when rinsing the chaff.
If you intend using flavours i.e vanilla extract or any other, add them when blending the groundnuts.
Raw groundnuts, cassava, corn and some other food items may contain aflatoxins. Aflatoxins are produced if food items are contaminated with a certain kind of mold. To eliminate the risk of aflatoxins that are harmful to human health, boil the Groundnut Milk before drinking.

From the Quacquarelli Symonds (QS) Rankings for 2019, in its fifteenth edition, released list of Top African Universities.

The QS ranking of universities is one of the three globally recognised higher education ranking agency. And ARWU (Academic Ranking of World Universities) & The Times Education (THE) ranking organisations are also recognised.

Unsurprisingly, South African universities were the majority as they constitute 53% of the top universities in Africa.

But there are eight other universities jointly ranked at the 10th position.

Here is an overview of the top universities in Africa this year, in reverse order of appearance in this year’s ranking, including information on each university’s location and other details.

=10. University of the Western Cape

Starting off our overview of the top universities in Africa in 2019 is South Africa’s University of the Western Cape, located in the Bellville suburb of Cape Town. Founded in 1959, the university also played a key role in the fight against discrimination and racial inequality in South Africa’s history.

=10. University Of Nairobi

The University of Nairobi was originally established as Royal Technical College in 1956. But became part of the University of East Africa in 1963. This then split into three separate universities in 1970, including Makerere University.

Also, the University of Nairobi is one of the largest universities in Kenya

=10. Rhodes University

Rhodes University, is located in Grahamstown in the Eastern Cape Province of South Africa. But named after British businessman Cecil Rhodes.

The university is highly residential and relatively small, with around 8,000 students currently enrolled.

North-West University is also a South African institution that was formed by the merger of previous universities in 2004.

Egypt’s Assiut University was established in 1957 as the first university in Upper Egypt.

Alexandria University is also ranked 10th on the list of Top Universities in Africa. Also, 14th in the Arab Region Universities Rankings 2018.

9. University of Kwazulu-Natal

The South African University of Kwazulu-Natal is the 9th on the list and also another young university formed through a merger, in 2004. Also the university has five campuses around the KwaZulu-Natal province in the south east of the country.

8. Ain Shams University

Egyptian Ain Shams University, is ranked 8th in Africa’s Top Universities and also 17th in the Arab Region University Rankings 2018. As it is located in Cairo and established in 1950.

Ain Shams is a very large institution, hosting approximately 180,000 students in 15 faculties.

7. University of Pretoria

University of Pretoria is one of the largest universities in South Africa, with over 50,000 students at seven campuses. Established in 1908.

The QS ranking of universities is one of the three globally recognised higher education ranking agency. And ARWU (Academic Ranking of World Universities) & The Times Education (THE) ranking organisations are also recognised.

Unsurprisingly, South African universities were the majority as they constitute 53% of the top universities in Africa.

But there are eight other universities jointly ranked at the 10th position.

Here is an overview of the top universities in Africa this year, in reverse order of appearance in this year’s ranking, including information on each university’s location and other details.

=10. University of the Western Cape

Starting off our overview of the top universities in Africa in 2019 is South Africa’s University of the Western Cape, located in the Bellville suburb of Cape Town. Founded in 1959, the university also played a key role in the fight against discrimination and racial inequality in South Africa’s history.

The University of Nairobi was originally established as Royal Technical College in 1956. But became part of the University of East Africa in 1963. This then split into three separate universities in 1970, including Makerere University.

North-West University is also a South African institution that was formed by the merger of previous universities in 2004.

It is a large university, with about 69,000 students spread across three campuses in the North West and Gauteng provinces.

Egypt’s Assiut University was established in 1957 as the first university in Upper Egypt.

It is located in an urban campus in the large city of Asyut and offers courses both English and Arabic-taught courses.
