There's this talk that people keep saying about men. They say "food is the way to a man's heart" Take for instance when Chioma and Davido took off their love ride, many people said it was Chioma's culinary skills that earned her so much love from Davido.

However, I get friends that can cook all the good food of this world but they are single. Not that they've never been in a relationship. But, the relationship often ends before they reach climax. So, I'm confused o. Me sef can cook better food but if these guys finish eating, they will just clean their mouth and run away. But there's one guy that comes to eat my banga soup these days. Be like sey this guy go stay o but me never sure.

Granola is a healthy, comforting, and delicious treat that can be served as snack. It can either be made into bars, cookies or shredded bits as will be done with this recipe. The ingredients for this basic granola recipe include wheat, oat, coconut, honey and raisins are highly nutritious foods that are beneficial to the body.

Whole wheat and oat are full of fiber, high in protein, and contain vitamins and minerals like folate, iron, and magnesium.

Coconut supplies a high amount of saturated fat and carbohydrates as well as dietary minerals such as manganese, iron, phosphorus, and zinc.

Honey is composed of 17% water and 82% carbohydrates, with quite an amount of fat, dietary fiber, and protein.

Raisins are dried grapes and they contain protein and dietary fiber.

Considering all the nutrients contained in its ingredients, it's not debatable to say that granola is of high nutritional value and should be consumed often. Because granola is not often available in every store, it is a good thing to know how to make it. That way, you don't go running from stores to stores searching for granola when the ingredients are readily available and the process is not so hard.

Cooking this meal after a long time away from Foodiedame’s kitchen was a soul-wakening activity for me. And on this day, I got the inspiration of this recipe from a meal I saw BBNaija2018 winner, Miracle prepare during the reality show. The recipe was something like this but I couldn’t really remember. So, I used my own initiative and made a twist.

The potato porridge turned out really nice and delicious and because I’m a good friend, I want you to try it too. Also, just incase you want a potato recipe with egg, fish and all your favorite belly trimming ingredients in it, this recipe is for you.

So, how did I go about this low-fat, pocket friendly meal?

Ingredients

Potatoes (I couldn't use a standard measurement. But the diced potatoes filled the regular soup bowl (as seen in the recipe description))
3 medium size tomatoes
1 big green pepper
1 medium size onions
1 Tbsp powdered Cameroon pepper (if the pepper is too hot for you, reduce the quantity by half)
2 Eggs
1 cooking spoon of vegetable oil
1/2 tsp salt
2 stock cubes (knorr)
Dried fish to taste


Description
Wash and peel potatoes and dice into biteable sizes. Rinse potato cubes into a pot, add water and 1/4tsp salt.

Set potato on cooker and cook al dente (till edible).

While potato is cooking, wash and dice tomatoes, onions and green pepper, and set aside.

Clean the fish and set aside as well.

Once done, drain potato and keep aside.

Dry a clean sauce pan or pot (I used one pot for the entire cooking process) and add 1 cooking spoon of vegetable oil of choice. Also, add 1/4 of the black pepper.

When the oil is quite hot, pour in the veggies, starting with the onions and ending with the green pepper giving each veggie about 1minute to cook before adding the next. This is to allow the veggies adequately cook and softened.

After adding the green pepper, add the salt, stock cubes, fish and 1/2 spoon of black pepper leaving you with 1/4 for the egg. Stir sauce properly and allow to cook for 2minutes.

Within these 2minutes, break eggs, add remaining quarter portion black pepper, salt and some of the stock cube to your taste.

Empty the pot of the sauce ensuring not to take out the oil. You could pour the sauce over the potatoes like I did (if your potatoes are inside a dish and not a strainer).

Set pot back on the cooker, whisk egg and pour into the hot oil. Stir properly till egg is half done. Be careful not to completely fry the egg because you still want it to coat the potatoes and sauce somehow.

At half done, pour potatoes and sauce into the pot of egg. Stir carefully like a great chef; mixing the ingredients in without totally marshing the potatoes.

Cover the pot and leave to simmer for 2minutes.

Turn off heat and serve hot! tongue

Every food has it’s unique aroma. That’s why you can tell when your neighbour is preparing vegetable soup or when she’s preparing noodles. The aroma reaches the nose before the food reaches the mouth thus, the sense of smell explores our food before we eat it.

Smell does to discover and enjoy food as much as taste. If a food is going to taste good, you can tell by the aroma even though there have been exceptional cases whereby some food emit pleasant aroma but their taste doesn’t meet up.

Some food just get to implicate you especially, when you stay in a face me face you apartment where you relate well with your neighbors. They know when you’re preparing that nice food and know when to visit you.

The way your food smells also tells if a visitor will come back or not. Therefore, it’s good to know how to season your food rightly. Don’t put ogiri in a food that requires just stock cubes. In fact, I won’t forgive you if you give me that food.
So, here are my top 10 NIGERIAN FOODS WITH SUMPTUOUS AROMA:

They are categorized into Seasoned and Unseasoned because, there are foods that have aromas even without seasoning. But, there are some whose aromas come out best after you’ve seasoned them RIGHTLY.

Like I said in the forth paragraph, it’s necessary to season well and rightly to bring out the best of a food.
UNSEASONED
Amaranth soup

Amaranth soup


1. Vegetable(Amaranth) Soup: Amaranth is the most widely consumed vegetable in the Nigerian market. The aroma oozes out the moment your pour or dip it in hot water for blanching.
By the time you prepare the stew filled with stock fish, cray fish, IRU and pomo and you add the vegetable, your neighbors are finished. At that point, vegetable lovers salivate



2. Dodo: Dodo is still my most recognized unloyal food. It can’t be secretive. A few slices of dodo when dropped in hot oil releases such widespread scent that everyone around you become tempted to want to take a slice.


3. Noodles. Noodles: Just like dodo, noodles is also a spoilt brat that releases it gas once it gets in touch with water above room temperature.


4. Beans: Either prepared as cooked beans, beans pudding or beans cake, it will ooze out it’s lasting gas.

5. Garlic: Garlic contains a volatile sulphur compound which releases a crazy smell when chewed raw. But, I love the smell when it’s used as seasoning especially for chicken.
SEASONED

This set of food get their aromas room filling the moment they are well seasoned. Even though most of them have awesome aromas naturally, they perform better when seasoned.


1. Egusi Soup: One of my neighbours prepared egusi and for at least 2hours in two days, I perceived the aroma the moment I walk into the hostel.



2. Boiled Chicken: Chicken releases nice gas the moment it’s cooking but that smell can’t be compared to what it emits when it is well seasoned with onions and garlic.



3. Ogbono Soup: Ogbono announces itself the instant it is cooking. Even though you’ve prepared jollof rice for your arriving visitor, he reconsiders the food option as he perceives the aroma of Ogbono.



4. Banga: I’ve not prepared this before so, I can’t give details. But, I read and heard that it also performs well in the aroma competition.



5. Scent(Clove Basil) Leaves (Efinri): In life, some things were not made for the big role. Rather, for minor life changing roles. Preparing Scent leaf soup, stew or sauce is not as great as adding few leaves or little bits of it in food. Even pepper soup would miss it if it becomes absent. Clove Basil beef stew is just beef stew without it.

In every discussion pertaining to healthy living, it is impossible to exclude vegetables. This is because they are the easiest, cheapest, most reliable group of food with no consequence.

Consumption of vegetables provide taste, palatability, increases appetite, provides fiber for digestion and prevents constipation. Therefore, at this time, it is important that we discuss why you should take more vegetables in 2017; this year.

Vegetables boost the immune system: Getting enough sleep and exercise, and keeping your stress level down is really helpful to the immune system. But having a right diet is just, if not more, important. And among the many fresh fruits and vegetables that have this quality includes spinach, kiwi fruit, berries, mushrooms, carrots, garlic.

Reduce risk for Non Communicable Diseases(NCDs): Fruits and vegetables contain vitamins which prevent a wide range of noncommunicable diseases and conditions especially the chronic diseases such as stroke, cancer, heart diseases and type-2 diabetes.

They contain anti-inflammatory properties: The immune system attacks anything it recognizes as foreign in the body through the process of inflammation. Inflammation directed at truly threatening invaders protect your health.

But, when inflammation persists, day in and day out, even when you are not threatened by a foreign invader, Inflammation becomes an enemy. Many of the chronic diseases like cancer, heart disease, diabetes, arthritis, depression, and Alzheimer's have been linked to chronic inflammation. Goodnews! Vegetables contain anti inflammatory properties thus making us more healthy.

They have lighter weights: Unlike most African meals especially the swallows that tend to put your back on the couch after eating, vegetables give you satiety yet, do not put you down. You’re still active after eating. This is because of their light weightiness.

They contain low calories and cholesterol: The calorie content of most vegetables is of very small quantity and expending them is easy. Some vegetables even contain antioxidants that lower cholesterol level already contained in the body.

Anti-aging property: Tomatoes contain lycopene, deep-purple skinned egg plants gets its rich color and anti-aging power from nasunin, a nutrient that helps fight the spread of cancerous cells by cutting off the blood supply they need to multiply.

Vegetables have been proven to have a whole lot of health benefits and this is the reason why we are urging everyone to increase the consumption. Among the very many vegetables of the world, let’s examine TOMATOES and see its importance. Why must we increase tomatoes consumption?

Tomato, a vegetable (and a fruit) forms a considerable part of cuisines. It is one of the most popular garden vegetables across the globe. Alongside its essence of improving the flavor of food, its health importance cannot be overemphasized.
Importance:

i.Improving eye sight : Vitamin A is present in tomatoes and this aids in improving our vision, as well as in preventing night-blindness. Another vision protector (from cataracts, macular degeneration etc) is Vitamin C and tomato is a good source of this vitamin.
Lycopene is the pigment responsible for the vibrant red colour of tomatoes; it is also an excellent carotenoid for good vision.

ii. Protects the Heart from cardiovascular diseases : Consumption of tomatoes reduces the risk of heart diseases, including hypertension which can otherwise be known as high blood pressure. Tomato contains fiber, potassium, vitamin C and choline which all help the heart health.

iii. Functionality of the digestive system: Tomato is known to contain a reasonable amount of fiber that helps in keeping the digestive system healthy by lowering the blood cholesterol, preventing constipation, diarrhoea, and removing toxins from the body.

iv. Reduce blood clot risks:
Tomato juice reduces the risk of blood clots which can cause blockage for the bloodstream. To stay healthy and keep the blood healthy, it is important to take foods that allow blood flow freely. Phytonutrients in tomatoes have been shown to help prevent excessive clumping of platelet cells.

v. Triggers DNA activation and Increases fat burning capacity: Tomato contains 13-oxo-ODA; a special type of unsaturated fatty acid that helps decrease the amount of neutral fat in yrome from setting in. A substance that has been found to promote healthy fat burning enabling you to trim down your sides without going to the gym.

Other importance of tomatoes includes; improving the functioning of the digestive system and the liver, prevention of constipation, especially when mixed with spinach.

Among the various ways we prepare rice and beans, we have Plain rice and beans,
Jollof rice and beans,
Rice separate, beans separate which is the common one used in restaurants but the least tasty. And lastly my new recipe, FRIED RICE AND BEANS!
Preparing beans is a task for a very patient person except you have a pressure pot. Thus, for this recipe, ensure to have your pressure pot ready if you can’t afford the patience of using an ordinary aluminium pot.


More so, fried rice prepared with chicken stock is a great one but for this recipe, I didn’t use chicken because of personal reasons. I used TOFU.

Therefore, you can include chicken when you want to prepare yours. I will include the process in the recipe and I know it will taste great. Just make sure you come back to tell me how it went.

Fried Rice (Beans) INGREDIENTS

3 milk cups of Rice
1 milk cup of black head Beans
Carrots
Tofu *optional*
2 Tsp Vegetable Oil
1tsp White pepper
Onions
1tsp Curry
Thyme
Salt
Other seasonings like knorr cube
Chicken
* Unspecified quantity of ingredients should be to taste

PREPARATION
1. Cook beans to a soft but firm point. The beans should be soft to an edible point but not easy to marshy. This is so that it can be able to withstand more heat and not mess up the oil during frying.
Note:
Whether to add onions or not to the beans is your choice. Will you be willing to pick out beans from onion by the time the beans is done cooking? Because, you do not need the onions in this recipe.As for me, I cooked the beans with onions and picked them out when I was ready to use the beans. This is because, I believe onions has a task in getting beans ready faster.
It’s better to put water gradually so as to avoid large amount of nutrient from being washed away. By the time the beans is done, the water- beans ratio should be like 80: 20.

2. While the beans is cooking, chop the veggies( carrots and onions) and Tofu.
3. For inclusion of chicken, cook chicken, seasoning it to taste.
4. Precook rice for some minute. Boil water to about 100°c, pour the washed rice in it and allow to simmer for maximum of 10minutes. Sieve the rice, throw the water away, wash the rice again. Set aside in a sieve allowing draining of grain.
5. Your beans should be done enough at this point. All the beans is edible and at least 80% can still withstand heat stress without becoming marshy. Just like the rice, sieve the beans, discard the water, you can try to pick mashed beans out before setting aside to drain.


6. It’s time to fry. Heat pot and pour in the vegetable oil. Allow the oil heat up, add the seasonings, curry, thyme, Salt and stir. Put in the beans, allow to fry for about 2mins. Add the tofu, carrot, onions

7. Pour in the rice gradually and stir. You could pour in like ⅓rd first and another portion till you’re done. Fry for some minutes till you can see that the white rice has absorbed the yellowish green moisture in the pot earlier.
8. Add the chicken stock at this point and add little more water. Because the rice is precooked, less water is needed at this point and heat level should be medium. Allowing the rice to get cooked yet, minimizing water input.
9. Cover the pot and allow to cook till it’s edible to your taste and dried from moisture.

10. Serve, enjoy and come back to thank me.
