I think you should add some more icing sugar, what's the room temperature you are working in?

even when its as hard as rock, it starts melting once I leave it to dry

Add more icing sugar till you get what you want.....my little trick? I add a teaspoon of lime. Gives the royal icing a nice flavour and makes it dry fast

Will the icing prevent it from weeping?

Make sure your mixing bowl is clean and free from oil and water.

If the icing is watery add more icing sugar, if it is too stiff add lime to thin out....it will even help your royal icing crust faster.

Good morning everyone.
Am having a difficult time with royal icing. It doesn't dry and it weeps. I don't know if its the egg white or there is something am doing wrong. Please any solution to this?
If its the egg white,, is there a substitute for egg white in royal icing?
Your inputs will be greatly appreciated!
