For those that travel a lot (within the country), you will definitely have seen people hawking a black thing tied in a transparent nylon. Well, this is it! The almighty dodo ikire made out of overripe plantain with lots of pepper fried in palm oil. Enjoy!


Ingredients

2 pcs plantain

2 pcs rodo

1 pc onion

1 cup palm oil

1 pinch salt

Gizdodo

This is the ultimate Nigerian recipe. Gizdodo needs no introduction as its is the perfect combination of deliciousness - gizzard and dodo (fried plantain). Whip it up today grin


Ingredients

1 kg gizzard

3 pcs plantain

3 pcs tomatoes

1 pc green pepper

5 pcs rodo

2 pcs onions

1 teaspoon black pepper

1 teaspoon salt

2 pcs stock cubes

2 pinches tumeric

1 cup olive oil

1 pc yellow pepper



Method

Peel and dice the plantain. Fry until light brown & set aside.

Wash and blend the pepper, tomatoes and 1 onion. Not not blend to a smooth paste.

Cook the gizzard with onions, stock cubes and salt until soft. Set aside.

Put some oil in a large sauce pan and fry the pepper mix for about 4 minutes. Add in the remaining stock cubes and spices (where necessary).

Allow to cook for 2 minutes.

Plantain Moi Moi


This recipe was born because someone somewhere didn't want to waste overripe plantain & today, we are thankful to that person. Lol. Kids & toddlers will love this meal.


Ingredients

3 pcs plantain

200 grams corn flour

4 pcs rodo

2 pcs onions

1 pc smoked titus

170 grams cray fish

2 tbsps vegetable oil

2 teaspoons salt

2 pcs maggi cubes

1 bunch moin moin leaves


Method

Mix the cornflour in warm water until it forms a smooth paste. Set aside. We are using cornflour to replace plantain flour. If you have plantain flour, feel free to use it.

Using overripe plantain, peel the back of the plantain, slice the plantain and place in a blender/food processor. Add in cray fish, pepper and 1 onion. Blend all together until smooth.

Wash, cut and clean the fish. Cook with one onion, salt and seasoning (if you desire). Cook for about 5 minutes. De-bone and shred with hands.

Mix the plantain and the cornflour paste together in a bowl, add in the fish, salt (if necessary), oil and stock cubes.

Scoop into moi moi leaves or bowl, wrap well and cook in a pot with water for about 45 minutes.

You may need to add water at intervals as moi moi tends to dry up quickly.

Serve with pap/ogi.

Baked Plantain With Avocado Dip


This recipe is very delicious and super healthy snack. So don’t feel guilty munching this combo because you will be doing your body a whole lot of good.


Ingredients

4 pcs unripe plantain

1 tbsp coconut oil

1 pinch salt

1 teaspoon garlic powder

1 pc avocado

1 pc garlic

1 pc lime

1 cup olive oil



Method

Preheat your oven to 425ºF. Line a large baking sheet with parchment paper.

In a mixing bowl, toss the plantain in with coconut oil, salt and garlic powder. Place plantain on sheet and bake for 20-25 minutes, turning the fries at intervals. Bake until golden or brown slightly.

Allow to cool a few minutes before serving.

Put avocado in a blender, add the garlic, lime juice and salt. Blend until somewhat smooth and creamy. Add some water and blend until really smooth and creamy.

Then drizzle in the olive oil. Blend until well mixed and creamy.

Serve Avocado sauce with plantain.

Plantain Fries

I get super excited about this recipe because it is the perfect alternative to the much less healthy french fries...And they are delicious! Everyone knows we Nigerians can sell an organ for well prepared plantain. Don't you agree? Try this at home today!


Ingredients

2 pcs plantain (not overripe, quite green)

1 teaspoon salt

1 teaspoon garlic powder

1 teaspoon chilli powder

2 tbsps olive oil


Method


Preheat your oven to 400°F. Line a baking sheet with parchment paper.

Peel and cut the plantains into strips like french fries. Pour over some oil and arrange on the baking sheet.

Mix ½ teaspoon salt, chilli powder and ½ teaspoon garlic powder. Sprinkle the spices over the plantain.

Allow to bake for about 20 minutes, remembering to turn over after about 10 minutes.

Serve with dip of your choice.

Ikpekere With Pepper Sauce


Enjoy this staple snack with a twist, a mix of unripe and ripe plantain dipped in a spicy sauce to die for. We draw inspiration from the popular nachos and salsa and have crowned this one to definitely try!


Ingredients

3 pcs unripe plantain

2 pcs ripe plantain

5 pcs tomatoes

2 pcs tatase

1 pc onion

4 pcs rodo

1 teaspoon salt

2 pinches black pepper

1 pc seasoning cube

2 cups vegetable oil

1 pc garlic clove

2 pinches curry powder



Method

Pour the oil into a deep fryer. Turn the heat up to high for a few minutes.

Peel unripe plantain and slice to thin long strips. Sprinkle some salt to taste and drop a few into the hot oil, a few at a time to avoid the pieces sticking together.

Repeat until all have been fried. Set aside.

Dice ripe plantain and fry using the same oil. Cook until slightly brown.

Plantain Pancakes

If you have been throwing away plantain, it is time for you to stop because we have found the best way to use overripe plantain. This is a confirmation that plantain is the real MVP. At this point, we have taken our love for plantain to another level.


Ingredients

3 pcs plantain

2 pcs eggs

1 teaspoon vanilla essence

1 pinch salt

4 tbsps olive oil

1 teaspoon baking powder


Method

Place the plantain, eggs, vanilla, baking soda and salt in your blender. Blend until you have a smooth batter

Heat some olive oil in a frying pan. Once the pan is hot, use 1/3 measuring cup to pour the batter onto the pan

Cook until the bottom edges of the pancake are golden brown, then flip the pancakes and cook the other side for 1-2 minutes, or until the pancakes are cooked through

Beefdodo

You must have heard of gizdodo but I bet you haven't heard of beefdodo. This is the younger brother of the ever popular gizdodo. This recipe is one of the creative ways you can use leftover beef (that's if that exists). Just remember to make it extra spicy! grin grin


Ingredients

1 kg beef

3 pcs Plantain

1 pc green pepper

6 pcs rodo

3 pcs onions

1 pc tomato

2 pcs seasoning cube (bouillon)

1 teaspoon garlic powder

1 pinch black pepper

1 teaspoon curry powder


Method

If you are not using left over beef, wash and cook the beef with onions, garlic powder, 1 stock cube, curry powder and any other seasoning of your choice. Cook until tender or for about 15 minutes.

Dice and fry the plantain until light brown. Set aside.

Blend the peppers, 1 onion and tomato. Do not blend smoothly. The rough texture will be needed in the preparation of this meal.

Heat the oil in a large sauce pan and cook the pepper mix for about 5 minutes. Season with stock cube, curry, garlic powder and salt.

Add in the beef and plantain. Reduce heat and stir fry for about 3 minutes. Set aside

Make rings out of onions and garnish.

In this thread I share a variety of plantain recipes worth trying because there is nothing more delicious! Quote me.

Plantain Lasagna


I am here for any excuse to have that golden brown plantain incorporated in my meal. This different version of lasagna is inspired by our Caribbean brothers and sisters.

5 pc plantain

3 pcs garlic cloves

1 pc onion

1 pc green pepper

1 teaspoon oregano

1 teaspoon cumin

2 pinches paprika

2 tbsps tomato puree

900 grams minced meat

1 cup green olives

2 pinches salt

1 teaspoon black pepper

2 tbsps tomato sauce

1 pc maggi

1 cup green beans

4 pcs eggs

4 tbsps vegetable oil

2 tbsps butter


Method

-Preheat oven to 350°F.

-Peel the plantain and slice lengthwise. Fry until golden brown. Set aside. Chop ½ of the onion, green pepper and slice the olives to fill 4 tablespoons and green beans to fill 1 cup. Beat the eggs. Set aside.

-Place another frying pan on medium heat. Pour in 2 teaspoon olive oil to heat up. Add in minced meat and allow to brown and mix with 1/2 onion (chopped), crushed garlic, oregano, cumin, paprika, black pepper and salt (optional) Stir contents and then add in the tomato paste, tomato sauce, olives and seasoning cubes. Allow to cook for about 10 minutes.

-Grease a 9" x 13" baking dish with butter and then pour ½ of the beaten eggs. Place plantain over the eggs to cover the dish length wise with no space in between, then about 1/3 of the meat sauce to cover, then green beans. Repeat the layer twice and top off with layer of plantain and then pour over remaining beaten eggs.

-Bake for about 30 minutes. Allow to stand for a few minutes before serving.

Dambu Nama, originating from Northern Nigeria has won hearts south of Nigeria. When we thought nothing could top suya and kilishi, we were introduced to this fluffy meaty snack. Now you get to make this in the comfort of your home no hawkers involved!!



Ingredients:

500 grams beef

2 pcs seasoning cube

2 teaspoons chilli powder

1 pc onion

1 pc garlic

3 tbsps yaji (suya spice)

2 tbsps vegetable oil

1 teaspoon ginger powder



Method:

Wash the meat and cut into chunks.

Put meat into a pot with 1½ seasoning cubes, half chopped onions, 2 crushed garlic cloves and ginger powder. Cook with little water until very tender and the meat pulls apart very easily. Ensure water dries out.

Put meat on a cutting board and shred the meat using two forks to pull apart in opposite direction. Alternatively pound meat in mortar.

Transfer meat to mixing bowl. Add in the suya spice, remaining ½ seasoning and chilli powder. Mix well and set aside.

Pour oil into a wok/frying pan and put on medium heat. Shallow fry the meat and stir constantly until golden brown and crumbly. Ensure the oil is not too much.

Allow to cool before serving. Dambu Nama can keep in the fridge for about 2 weeks if kept air tight.
