I think most often comes down to demand and supply, when I lived in Calgary, some Catholic school expects that one of the parents has to be a Catholic before kids can be offered admissions. Here in Saskatoon or the city I lived before that, no one cares.
There are also lots of schools to cater for students. Like in my area, there are like 4 elementary schools and they are all within 15 minutes drive of each other. So most grades are often one class as well. e.g. one grade 3 class in a school will have only maybe like 25 kids.

Some years ago, someone sued for the right to self age. "We live in a time when you can change your name and change your gender. Why can't I decide my own age?" he said. You would think he was "kind of delusion from the left" because you'd have failed to see he was making a mockery of the self identifying ideology. More like attention seeking. At least trans people try to commit to gender, they actually put in work to pass as the gender they identify as. Non-binary people just declare that they're neither, act as their actual gender and still demand all the social clout of actual lgbt people.

I don't ask you to call me any pronoun. I look like a guy and if anyone calls me "she", they'll just look stupid because I'm obviously a guy.

You don't choose pronouns because pronouns are just words used to substitute nouns and this substitution is done according to context. The context has to do with gender, number, point of view, and whether the noun is animate or inanimate. "They" is genderless, third person, plural, and animate. As you can see, there's very little wiggle room to mess around with this.
