I have some snails for processing, and need advice on what part to cut off, especially eradicating the snail poop and food remnant in its stomach.

Awww sorry dear. Wrong person to ask. My food pattern is funny. I've never tasted snail. I don't eat gizzard, don't eat birds- chicken or turkey, I only eat pure beef, not even those orisirisi. Fish is my love. Anything else, count me out.

The snail entrails must be cut off. The part is where the slime comes from.

The entrail is atop the snail eyes and mouth.

Don't forget to clear the snail digestive tract before cooking.
