I'm tired of the usual garlic, ginger and curry. I need a new spice that will give my stew a very nice smell.

Please, chefs in the house help out🙏

Small quantity of grated nutmeg 😋

I do use garlic a lot.






Try crayfish
thyme
Black pepper
uda
bayleaf
Onion leaf 🍃

Garlic n ginger are compulsory.
I use spicecity n Benny.

But in my surrounding we use uda in stew, soup, even porridge.

Freshly diced onions leaf is understandable to aim the aroma of stew,way back in the northern rth most food vendors n mum's including mine used it.

use scent leaves or curry leaves differently. The taste is delicious

Fry your diced onion in oil before you add pepper, don't let it get burnt then add CURRY MASALA is different from normal curry and a little nutmeg, then use chicken flavor as a seasoning.

Bleached red oil to brown, it will give you a sensational ayamase taste.

Use these make pepper stew

In recent times I have used this combo
Cinnamon
Cumin
Bayleaves
Star anise
Fennel
Fenugreek
Nutmeg
Ginger and garlic
Rosemary.

Use them to boil your meat and use the broth for the stew. You can also sprinkle the combo on the stew direct.

First stir fry your garlic and onions in oil on medium heat, there's a sort of aroma it adds to it.




Alternatively for stews you can get curry masala from Tiger foods it has most of the spices above apart from star anise and no MSG/Salt in that product, doesn't taste sweet or salty at all.

Anyways we learn everyday!

Use green pepper. U can also use spring onion.
