Who is the real wife?

Any one he paid her bride price is his real wife.

If he paid bride price for all the 3 women, the 3 women are his real wives.

You can't be joined in a holy matrimony unless both of of you register the marriage at the LGA registry in the Catholic, and other orthodox Christian churches. (Don't know about the pentecostals) So the second wife is the legally married one.

What if the church did not register the marriage at an LGA?

Court-wise,any marriage conducted in the court is the legal one.......But then again, you'll have to remember the fact that we are Africans and according to the African setting,one can also say the wife married traditionally is the legal wife...

Don't know about others, but the Catholic church would never wed the couple without a proof from the registry.
