My question is about the logic you are using here: if breasts, genitals and other sex characteristics supposedly have nothing to do with whether someone is a man or a woman, why is removing breasts described as gender-affirming for someone transitioning toward a male appearance, why do men cut of their D to make it look like v-jay-jay?

A woman having her breasts removed for cancer treatment and a trans man having chest masculinization surgery can have completely different reasons for undergoing a similar procedure. So your argument is moot.

Again, changing or removing a body part by itself does not transform you into another biological category. If you lose your arms and legs, you don't become a snake.
