Although I've had good experience in solving most of my programming problems myself, I still haven't been able to figure out how the AI in a chess game works. Not only that, how does it get so smart to possibly predict your next move. Has anyone tried this and can explain it ?

There are a lot of research works on this and most of these even have pseudocode to guide you.
You also have to learn about search trees. Its used a lot.

I have a many great materials on this; plus the standard protocol chess engines use to communicate with boards; plus some great engines. I was really into chess before I got really busy with financial quests! The point is I could send you the material if you gave your email address.

Read about Games of Perfect Information. Read about Minimax with Alpha-beta pruning. Read about evaluation function (you have to understand the game to come up with a sensible and effective function).

Thanks for the info. They require some maths calculations. Well I'm not thinking of creating a chess game. However, I'll soon release my first AI game
