The North men were never conquered by the Andals, it was basically a fortress (the terrain), they adapted quite nicely, and it was their lands, so I guess that's why they never moved south..

The north has had plenty of winters during the course of the series, i think 'winter' Ned kept harping about was more figurative than literal. The NK will bring the long night and where he goes...... Cold and death follows. That kinda stuff.
