Corned Beef Stew
Sauteed Spinach

Tostones:

Twice-fried plantain slices. Most people use green plantain for tostones. I prefer to use plantains with just a hint of yellow - just as they begin to ripen, so there is a hint of sweetness.

Slice your plantains as you would normally and fry.
Drain
Smash/Flatten by placing a plate over the fried plantains and pressing down.
Fry again

Your tostones should be nice and crispy. I like to season mine with a blend of salt, garlic and ginger (both ground not fresh). You must season as soon as they come out of the oil.

Spinach Mushroom Rice, Moin-Moin, Spring Salad, Plantains & Naija Stew (Beef).

Zobo Rice & Beans (with Sweet Corn) - my own creation.
This rice dish is so delicious!
I decided to try something different - cooked the rice in zobo (aka sorrel aka hibiscus).
Next time I will also cook the beans in the zobo for a deeper color.
Onions, garlic, ginger, my spice blend, coconut oil and a pinch of sugar (to counteract the tanginess of the zobo) take it over the edge.

Roast Chicken & Peppers with Wholegrain Spaghetti
Who says healthy can't be yummy?

Chicken:
Season with salt, garlic, paprika, sage, thyme, black pepper, cameroon pepper.
Let it marinate for at least 2 hours (overnight - 24 hours would be even better)
Roast at 375 degrees F (time varies depending on quantity of chicken, whole or pieces etc - more details will be on my blog)

Pasta:
I tossed the wholegrain pasta in my "naked efo riro" sauce (olive oil instead of palm oil) and there you have it. A healthy and incredibly delicious dinner!
