The name you're after is Zeljko Ranogajec.

Originally a card counter from Hobart, Tasmania, he’s in the blackjack hall of fame. But that's not where this gets interesting (even though he apparently made millions).

Ranogajec (along with a few others, notably David Walsh who is the owner of MONA) has a team of maths and programming geniuses (over 300 employees at last count) who identify tiny advantages in horse races and exploit them in a fashion not seen anywhere else in the world. He bets large amounts on horse races where liquidity is high (I.e. where the winning pool is big), and takes a small margin via a secretive strategy which is likely to involve backing most horses in the field on a sliding scale based on their odds.

Having access to the weight of cash required to allow the flexibility to only need single digit/low double digit percentage profits over the long run isn't in itself genius though, what is genius is that because he contributes so significantly to the turnover of the various online and physical bookmakers in Australia (he is estimated to punt ~$1B each year, and make up 30% of Betfair Australia’s turnover), Ranogajec has negotiated various rebates - he gets paid for gambling!
