To save your data, download twrp for redmi 5plus(Vince). Flash that through fastboot...download recovery ROM and flash on twrp( since recovery file is less than fast boot file)

Sure that's the right recovery? Had similar issue on Mi 5 not being able to read both internal and external memory after flashing twrp, had to look for the appropriate twrp recovery, and everything worked fine.

It still disappears on mine. I think it is normal for network to disappear on the data sim when calls are being made on the other sim that's not used for data.
