They are doing a pain test, meaning they are trying to ascertain the level of pain and discomfort a human can feel when bitten by different animals and insects species.

After the snake bites the rabbit or rat how will the rat now communicate with you a human being to tell you how painful the bite felt?

Not all experiments require an actual lab rat, some need human test subjects to be tested upon because specific feedback which an animal cannot provide is required.
