When given a project to work on, how do you start working? Is it that you just start coding and when you're done you show it to your client(s) for approval or what??

When you are given a job tell the client to make a formal statement of the problem if he can’t ensure you paraphrase everything he said. Give it to him let him go through it and when he is done keep it for record purpose. Incase he said something new so you can charge him

If it is a big project get a UI/UX designer to make a sketch of what they want. You can charge them initial fee or if it is too expensive then do it with paper pencil sketch.

After This get back to him after you plan everything( the work process) on paper and the time it will cost you, calculate your time and days, total amount of money, outsource and total cost. Get back and give amount. If he agrees

Then give him time of feedback as the process runs.

Pick up your plans and start coding.

only sketch the important idea. For such a large project you could ask them if they have any website that look like what they want.
Sketching a page don’t take up to 10 seconds just majorly boxes and words. It importance is to get the details and have they confirm. Although not for all client
