My question is which one is better coz I heard using the iPhone chip unlock means I can't remove and change the SIM especially wen I am travelling to any country that doesn't use the same network provider service.

The iPhone 8plus is the better deal..
depending on the network it’s locked to, it can be unlocked, but if it can’t, then a chip is a reliable unlock method.
