I don't really know if this helps to answer your second question and mind you, I haven't seen any episode of s2, I'm waiting till they all drop for me to binge watch them so take what I write with a grain of salt but here goes.....

Aegon the conqueror built the red keep but his son Maegor the cruel saw to it's completion. It is said that Maegor added his own part to the build which were secret passageways to get in and out of the red keep. No one knows the secret passageways except Maegor because he had the builders burned to death so that they won't reveal them to anyone. Over the years, some of these secret passageways have been found. In the books, the assassins Blood and Cheese (don't know if they are called that in the show) are said to be rat catchers the palace hired so obviously they must've seen some of these passageways by accident while hunting for rats which made it quite easy for them to come in without alerting the guards

Reason why Daemon specifically used someone familiar with the old dungeons. Cos normally, hardly anyone used that pathway to enter the castle no more. It's very large and expansive and have various old wings that is deemed not used anymore. That's why it's mostly unguarded.
That's how they gained entry into the main living quarters.

If you looked closely, the Greens where expecting a more crazy and head-on attack with Dragons charging at them.
