But why is it really so difficult getting a German visa?why must it take years and stress to get it through even when all documentation are exacts and correct?why is Poland ,Italy ,Sweden and other European countries very easy to access in less than a month?aren’t those the same route to enter Germany in an hour?

Yes you should start processing your passport because you already submitted an affidavit for change of name ..
They will ask for a new passport reflecting your new name.
And also try doing the change of name on your NIN.
Without your NIN no passport at the Nigerian immigration.

Registration November 2021 = approximately earliest possible appointment in January 2023 That is 14months in total.
Hopefully by next month same dates you booked you will get the invitation.

Is approval mail and verification completed mail the same ?
