I love cake and bake very well but I need to improve on the texture of my cake pls if anyone can help with their recipe I will appreciate it.

Try adding more butter,milk and extra egg and less sugar cos it can make it dense.i'l advise u check youtube videos u mite find something helpful |

Try using sandwich pans ie 2" pans and join the two together to form one cake, your cakes come out fluffy this way. You might also consider using excel sponge, I hear it gives great result, although I have never used it sandwich pans work for me. You can visit http://auntysazzy..com |

The secret to geting a fluffy cake is by creaming the butter and sugar together at a moderate speed. Once you get that creamy texture add the eggs gently and do not let it coagulate. Fold in the flour. Make sure you sieve your flour first to incorporate air. This will make your cake lighter. Try this victorian recipe : 250g each sugar,butter and flour(self raising). Four medium size eggs 1tsp vanilla 1 tsp lemon juice or milk (optional) Jam and freshly whipped cream for the filling. Try this method and let us know how you get on. |

haderdoughin: Dat is d measurement I use and I ude mixxer then measurement isn't actually your problem. just take time to vream much longer at moderate speed. rule of thumb for testing your sugar margarine is to dip your finger in water then in the mixture. if it comes out clean then you are done creaming. aside your creaming, make sure you add your liquid ingredients first before the flour, this helps you not to work on the flour for long. Make sure you fold in your flour but try not to overdo it. have fun dear |

Not all cakes are meant †✽ be fluffy and light,some cakes are meant †✽ be moist while some are meant †✽ be goey. If u want ur cake †✽ be light and moist,cream ur butter n sugar until its off white in colour or u do the thumb test like Zion said.I don't use the mixer †✽ fold in my flour I fold in with my wooden spoon. Add flour †✽ butter mixture fold in the add ur liquid then add ur remaining flour. If u add liquid first,the butter mixtur forms lump n the air trappped from creaming will escape. Fold in gently gluten formation is what hardens a cake. My little secret I normally mix cornflour †✽ my all purpose it reduces gluten in the flour but u need †✽ do the chemistry urself. 4 Likes |

Pls how can i get d right measurement for my flour, i dont av a scale what else can i use to measure 250g flour? and how can i steam my cake on stove top, though i dont av steam pot. |

richyflex: You will need some kind of measurement. The only kind of cakes I know you steam are actually called pudding eg sticky toffee pudding, bread and butter pudding etc. |

use standard Cup measure. .available in cake stores in Nigeria
2 Cups of flour is 250g
1 cup of sugar is 200g
then get the satchet margarine 250g.. but frankly you can get the small scale for 1k in cake stores to save the day. |

with or without softener, you ll get a very soft cake... frankly, I'm yet t see a foreign cake recipe with softener inclusive cream your butter & sugar well in one direction if u are not using mixer.or add enough eggs fold in flour don't over mix the batter. 1 Like |

Visit www.gratednutmeg.com click on the section for sponges, he substitute some confectionery flour for corn flour, making the cake lighter and softer, he also makes use of buttermilk making the cake light and fluffy |

The butter and sugar is the secret behind fluffy cakes, trust me on this. If those two are properly mixed till it's fluffy then your cake will defintely be fluffy. Add flour or anything powdery like baking powder gradually and always add anything liquid like water and milk in between 1 Like |
