Quail eggs are small speckled pearls that nature gives us. Since ancient times, this delicacy has been prized as a dietary healing food. While quail eggs are so small (10 – 12g), they are packed with many biologically active substances we need to be healthy. They are an abundant source of useful trace elements and vitamins.

In comparison with chicken egg, the quail egg contains six times more vitamin B1, fifteen times more vitamin B2, five times more phosphorus, Iron, Potassium and others. They are richer in proteins, vitamins (A, B complex, E), Calcium, Zinc and Sulphur.

Due to their amazing content, quail eggs are considered as a dietary food. They do not have “bad” cholesterol (LDL) and very

rich in good cholesterol (HDL), so even the senior citizens can eat them. Regular consumption of quail eggs can therefore help against several diseases.

The use of quail eggs for its therapeutic properties did not begin in this age. Early Japanese, Egyptian and Chinese civilizations used it to treat Asthma and sexual impotence. These therapeutic properties were rediscovered in France by Dr J. C. Truffer (1067) who used it successfully in the treatment of impotence and allergies.

HOW TO EAT QUAIL EGGS

Quail eggs are best eaten raw after washing them in boiling water. Eggs must be very fresh, drink raw in the morning on an empty stomach instead of coffee about an hour or two before breakfast. People who cannot swallow raw eggs can mix them with a little honey, fresh cheece or lemon juice. You don’t have to be afraid of salmonellosis because the body temperature of quail is higher than that of chicken. Quail eggs are resistant to infections due to their increased content of lysozyme that kills harmful bacteria.

The eggs can also be eaten by pouring hot boiling water on it, allow to steep for 10- 15 mins and eat.

The eggs can be eaten with the shell to get the maximum nutrient in it.
