I invited my girlfriend immediate family for b/fast so i stepped out of the party and into the kitchen. My brother suggested yesterday - instead of making something african why not go all-the-way Caribbean. Guess what, while they are outside talking, I am turning off this computer and hitting my bed now. They can i don't have no manners but zzzzzzzzzzzzzzzzzzzzzzzzzzzzzzzzzzzzzzzzzzzzzzzzzz Johnny Cakes or Fried Dumpling INGREDIENTS : 4 cups flour 2 teaspoons baking powder 1.5 teaspoon salt 1/2 cup butter or margarine 1/2 cup cold water 1 cup vegetable oil for frying METHOD: Sift the flour, baking powder, and salt together into a large mixing bowl. Cut in the butter or margarine until the mixture forms marble-sized doughballs. Add the water 1 teaspoon at a time, just enough to bring the dough together with a firm consistency. Heat oil in a heavy bottomed frying pot over medium-low heat until hot Break off peices and Form the dough into slightly flattened biscuits, about 2 inches across. On a lightly floured surface, knead the dough well, for about five minutes. Fry the Johnny Cakes, uncrowded, in the hot oil only until they become golden--(Approx abou t2- 3 minutes) Remove they Johnny cakes with and drain on a paper towels to absorb the extra vegetable oil. Johnny cakes are usually served for breakfast with Bully Beef or Ackees. (Serves 6) PICK-UP SALTFISH Ingredients: 1 medium onion, minced 1 12-ounce piece dried -salt cod (with skin and bones) 3 tablespoons fresh lime juice 1 avocado, peeled, pitted, 1 medium green bell pepper, minced 1 hard-boiled egg, peeled, chopped 1 tablespoon finely grated lime peel 2 medium tomatoes, seeded, finely chopped 1/2 teaspoon minced seeded Scotch bonnet -chile or habanero chile Directions: Rinse the salt cod with cold water. Put the fish in a large bowl, cover with cold water. Cover the bowl and refrigerate for at least 24 hours, changing the water once. Drain. Add the fish in a large skillet, cover with cold water, bring it to a boil. Reduce heat and simmer until the fish flakes easily for at least 50 minutes. Drain and cool slightly. Using your fingers, shred the fish, throwing away skin and bones. Measure 1 1/2 cups of shredded fish then put it in a medium size bowl, reserve any of the remaining fish for another use. Add onion, bell pepper, tomatoes, lime juice, lime peel along with the chile to fish, stir to blend. Season with salt & pepper. (Can be made 4 hours ahead. Cover and chill.) Mound the salad right into the center of the platter. Sprinkle with chopped egg. Surround with avocado slices and serve. Source: Caribbean Recipes |

Is this a food recommendation thread or something. . Cause id really like people to try this if they havent; Boiled Potato and Egusi soup It is unbelievable sweet and the nutrition value is great too. |
