Grilled fish
This is another way to make your
fresh fish
delicious and still healthy. The recipe
is very simple and can be twisted to
suit the available species in your kitchen. Grilled fish is very popular
and is usually gotten at bar, joints
and eateries as many people don’t
think it is easy to prepare. Follow the guide below and make
yourself a delicious grilled fish dish.
Remember to garnish as desired. Ingredients you’ll need:
2 whole fish (any type of your
choice)
1 tablespoonful ground black
pepper
1 tablespoonful thyme or basil or dried
oregano (optional but adds nice
taste and flavour)
1 tablespoonful ground kuli kuli or
peanut butter(optional)
1 tablespoonful ground red chili pepper
or 1/2 teaspoon of ginger powder
1 tablespoonful garlic powder or 3
cloves
of garlic, minced
1 bouillon/stock cube/seasoning cube
(optional)
1/2 teaspoon curry powder
(optional)
3 tablespoonful vegetable oil
1/2 teaspoon salt to taste Most of the spices are optional but
the pepper, oil, salt or seasoning
cubes are the most important, but
you can add the rest to your taste. Preparation direction
1. Clean the fish in salted or lime
water and remove the scales, gills
and guts. Rinse thoroughly and set
aside. 2. In a small bowl, mix all the
ingredients together until its well
incorporated except the fish. 3. Place the fish on a wide
aluminium foil wide enough to
cover properly then use a sharp
knife to slash lengthwise on each
fish. These slashes would enhance
the taste of your dish. The number of slashes you make
will
depend on the size and length of
the fish
you are using. 4. Using a brush or your hands rub
the mixture you’ve made of all the
ingredients on the fish and inside
the spaces made by the slashes.
When it is well covered with the
mixture of the ingredients leave it in the fridge for 20-30 minutes. 5. Another effective way to do that
is throw the fish into a large ziploc
bag and pour the mixture into the
bag. Shake rigorously and leave to
rest 6. Preheat the oven grill for 20
minutes while you wait for the fish
to soak in the mixture of
ingredients 7. Take out the fish from the fridge
remove the foil then rub some oil on
the grill and place the fish on the hot
grill. 8. Leave the fish to cook for 5-10
minutes on one side before flipping
over to the other side (the time it
takes depends on how hot the grill
is). 9. If you want the fish to be tender
grill the fish inside the foil. 10. The fish is ready when it is
brown on both sides. Garnish with lemon slices, fried
plantains, spicy stir-fry or veggies
(optional). ENJOY!!!
