i dont really know to do it in an industrial scale but i can help u with the small scale method.
Peel the plantain n cut it into little horizontal bits then u sun dry (u can also use any other alternative)
the plantain is cut into little bits so that it can dry faster.
When the plantain is properly dry, take it to a mill n grind.
