lkg/ 21b assorted meats (oxtail, tripe, ponmo & bushmeat)
450g/llb stock fish(pre-soaked)
450g / llb dried fish (washed)
225g / 8oz whole dry prawns (cleaned)
225g / 8oz ground ogbono seeds
225g/8oz ground crayfish
25g / 8oz ground pepper
25g / loz iru
I medium onion
290ml /10 fl oz palmoil
3pt stock or water
salt to taste
Wash the assorted meats thoroughly and place in a pot.
Add the sliced onions, ground pepper and some stock or water.
Cook for 30 minutes.
Add the washed smoked fish and stockfish.
Cook for a further 10-15 minutes adding a drop of water or stock as needed to stop it from burning.
In another pot, heat the oil and fry the ground seeds for 3 minutes to bring out the nutty flavour.
Gradually add the stock and whisk until it draws and bubbles.
Add the cooked meats peppers and crayfish.
Dissolve the iru (locust bean) in a little stock and add to the soup.
Allow to simmer for another 10 minutes, check seasoning and serve hot with pounded yam.

VARIATIONS
OGBONO SOUP WITH BITTER LEAF

225g / 8oz washed bitter leaf added to main recipe.

OGBONO SOUP WITH UGWU
500g /1 lb shredded ugwu leaves added to main recipe.


you can also add mushroom and Okro to this soup to give it a different flavour.
I'm not sure where you are exactly and what of the above ingredients is available there. but Iru and ogbono are easily available in most places I think.

u guys are life savers. my boyfriend is Ibo and he's been demanding i learn how to cook their native soups. And now that i found this thread grin grin cheesy

can you or any other person here please give me the recipe for fruit salad? I mean those attractive and creamy ones we find in fast food joints, your reply will be highly appreciated.

I am thinking of doing something like that in my spare time. I hope Nlanders wil be forthcoming with sugestions once I start.

I will try to post  some of the draft here as I go along because I will try to incorporate other Nlander's recipe contributions ( with acknowledgements of course) in the book.

Ingredients:

A bag of gizzard
Vegetable oil
1 red bell pepper
6 Roma tomatoes
5 Habenero pepper (rodo) ( or desired amount)
One large red onion
2 Maggi cubes
seasoned salt
Curry
Thyme
Bay leaf


1. De-ice the gizzard then season with seasoned salt, Maggi cube, bay leaf and drop one habenero pepper. Cook until tender.

2. Blend the tomatoes, onion, bell pepper, Habenero and Maggi together.

3. Now you could either fry the gizzard or bake them in the oven till they are a nice brown colour.

4. In a separate pan heat the vegetable oil on medium heat, drop a slice of onion for the sizzle test, wait until the onion turns brown then add your blended mixture.

5. Add a bit salt, curry and thyme. And bay leaf.

6. Cook for 40 minutes on medium heat, do not stir to avoid splash, do not cover either or it will take longer to fry.

7. Add your gizzards and allow it to marinate for 10 additional minutes.

6. Add your sliced onions and green pepper for 3 minutes only…do not over cook or the peppers turn brown…Remember the green pepper and onions doubles as a garnishment.

Enjoy.

Can be eaten with Dodo, Rice ,

THis babysitting job is getting to be more than i bargained 4.

Who knew a 3 and 5 year old could have SO MUCH ENERGY !!!  shocked

Of course you can substitute with snail.

Would make a nice Spicy change from ordinary fried snail abi?

I assume that no lunch is served during weekdays you are either at school or work.

Monday
Breakfast: Toast/Oatmeal
Dinner: White rice w/beans , vegetable stew and dodo

Tuesday
Breakfast: French Toast; Syrup; Orange Juice; Milk; Hot Tea
Dinner: Vegetable Yam porridge with fish

Wednesday
Breakfast: Oatmeal; Toast, Margarine & Jelly; Orange Juice; Milk; Hot Tea
Dinner: Fried rice with chicken and vegetables

Thursday
Breakfast: Cereal with eggs & toast
Dinner: Ewa Agoyin with fish

Friday
Breakfast: Plantain & Eggs
Dinner: Spaghetti Bolognese

Saturday
Breakfast: Akara w/Ogi or Pancakes/French Toast
Lunch: Ofe Nsala (fresh fish soup) w/pounded yam
Dinner: Jollof rice w/moimoi and assorted meat
Snack: African Salad/Ugba

Sunday
Breakfast: Yam & Eggs
Lunch: Okro Soup w/pounded yam
Dinner: Peppered gizzard w/dodo
Snack: Pepper soup

Most of the recipes for these foods are here on the board so that should make things much easier.
